I was cooking Tacos Al Pastor at the same time we were receiving a tutorial on a water system that produces alkaline water along with a myriad of health benefits.
Once our lovely and compelling presenters had left, I indulged in a cocktail. Using the pineapple juice I had drained from the tidbits that are featured in the tacos.
TACOS AL PASTOR
1 pound pork tenderloin, cut into 1/2 inch cubes
1 (8 ounce) can pineapple tidbits in juice, drained
1 onion, chopped
1/4 cup chopped fresh cilantro
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon pepper
1 teaspoon chopped garlic
3/4 teaspoon salt
1 tablespoon canola oil
6 tortillas, warmed
Toppings: sliced radishes, fresh cilantro leaves, crumbled queso fresco, sliced jalapeño
Combine pork, pineapple, onion, cilantro, chili powder, ground cumin, oregano, pepper, garlic and salt in a large zip-top plastic freezer bag. Seal and chill 4 to 24 hours.
Cook pork mixture in hot oil in a large nonstick skillet over medium high heat, stirring often, 10 minutes or until pork is done. Serve mixture with warm tortillas and desired toppings.

AQUA PEARL
3 ounces pineapple juice
6 tablespoons gin
4 teaspoons fresh lemon juice
2 teaspoons simple syrup or agave syrup
2 teaspoons blue curaçao liqueur
4 dashes of angostura bitters
ice cubes
Mix pineapple juicce, gin, lemon juice, simple syrup, blue curaçao, and angostura bitters in a cocktail shaker. Fill with ice. Cover and shake well. Strain into 2 martini glasses.

CLASSIC WHISKEY SMASH
After touring the gorgeous home and garden of P Allen Smith, at Moss Mountain Farm, our neighbors new home, a friends re-model and anothers new home, then all the fabulous homes on the Washington School Tour of Homes - I tried to come back to my own place of residence and look at it with a discerning eye - to determine what to love and what to change. Drawing on a little of the Serenity Prayer, and the wisdom to know the difference.
My husband realizes, every time I go on a home tour, it's going to cost him a lot more than the ticket price - but for today, it was enough to sit out on our back deck, enjoy the fresh spring foliage, and a cocktail.
CLASSIC WHISKEY SMASH
Muddle 7 fresh mint leaves, 1 lemon half, quartered lengthwise, and 1 tablespoon agave nectar in a 16 ounce mixing glass or cocktail shaker, 4 to 5 times, just to release juices and oils.
Add 1/4 cup bourbon. Transfer to an old fashioned glass. Fill half way with ice, stir. Garnish with mint.

THE SCREENED PORCH
My husband was out of town this weekend, turkey hunting, and my days were filled with kids activities, laundry and reading on the back porch, and my evenings with friends, food, wine and lots of laughter and great conversation. It was a wonderful weekend, and, wonderful to welcome my husband back.
I cooked a lovely meal, and we began the evening with cocktail hour. I even shared my precious solitary spot with him out on the porch.
THE SCREENED PORCH
Muddle 2 teaspoons of fig preserves, 1 teaspoon of honey, and 2 lemon wedges in a cocktail shaker to release flavors. Fill shaker with ice cubes, and add 1/4 cup Bourbon. Cover with lid and shake vigorously until thoroughly chilled (about 30 seconds). Strain into a cocktail glass.

ORANGE WHIP COCKTAIL
We decided not to cook, but to enjoy our evening meal out. We were having friends over for dinner the next night, and had been busy in the kitchen for most of the day, preparing for the multiple courses we were planning to serve. We walked down to a local restaurant, had a lovely dinner, and once home, put the kids to bed and mixed up this "Orange Whip" cocktail. Although it looked a little curdled, the orange juice gave it the appearance of being healthy, and the flavors came together deliciously.
ORANGE WHIP COCKTAIL
1 ounce Irish Cream
1 ounce amaretto
1 ounce Cointreau
4 ounces freshly squeezed orange juice
Pour the Irish Cream, amaretto, Cointreau and orange juice into a cocktail shaker filled with ice, shake well. Add orange juice and shake well. Strain into a glass.

BANANA INFUSED JAMESON
3 bananas, peeled and sliced
1 750ml bottle Jameson Irish Whiskey
Place bananas and Jameson into a sealed container for 3 to 4 days. Strain out the banana slices, and discard. The infusion should be slightly viscous and cloudy - this gives the drink its unique texture, body and flavor. Pour infused Jameson back into container or bottle. Serve in a rocks glass with ice.

WILD HIBISCUS COCKTAIL and CUMIN AND CURRY SPICED LOTUS CHIPS and BRAISED BEEF TENDON and RABBIT STEW WITH OLIVES AND ROSEMARY and DUCK EGG POTS DE CREME
We welcomed our fellow food lovers from Supper Club into our home, and were excited and inspired to take our guests on a culinary adventure. We had many, many ideas of weird and wonderful foods to try and dishes to cook, but narrowed it down to seven courses and a "muse from the chef" - a sip of tomato soup and bite of grilled cheese sandwich - comfort food among all the strange dishes.
My husband was away in Fort Smith at a conference all day, but made it home in time to grill marrow bone and octopus to perfection.
WILD HIBISCUS COCKTAIL
5 ounces St-Germain Elderflower Liqueur
5 ounces pink grapefruit juice
2 1/2 ounces wild hibiscus syrup
1 bottle of champagne
wild hibiscus flower
Pour Elderflower Liqueur, grapefruit juice, and wild hibiscus syrup evenly into champagne flutes. Top with champagne and garnish with a hibiscus flower.
Enjoy!
CUMIN AND CURRY SPICED LOTUS CHIPS
1/2 pound of lotus root
2 tablespoons olive oil
1 teaspoon sesame oil
2 teaspoons cumin
1 teaspoon curry powder
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon cinnamon
Heat oven to 350F.
Soak lotus root in cold water for 30 minutes. Drain and dry with paper towels.
Place lotus root, olive oil and sesame oil in a bowl and toss until well combined.
Add the cumin, curry powder, salt, pepper and cinnamon and toss until fully combined.
Place on a baking sheet lined with parchment paper. Bake for 15 to 20 minutes, or until golden brown and crisp. Transfer to a cooling rack and allow to cool completely.

1/2 cup soy sauce
1/2 cup sugar
6 cloves garlic
2 star anise
1 tablespoon cumin
2 tablespoons freshly grated ginger
1 stick of cinnamon
Place the beef tendon in a pot, fill the pot with water, cook on medium heat for about 30 minutes. Pour off liquid until there is just enough to cover the tendon, add the wine, soy sauce and spices to the pot. Braise on low heat, checking hourly to see if its at the level of softness you like (I cooked mine all day!!).
Remove beef tendon from pot and cut into chunks. Serve with sauce over prepared udon noodles.

In a large, deep skillet, heat 2 tablespoons of the olive oil. Season the rabbit with salt and pepper. Working in 2 batches, brown the rabbit over moderately high heat, turning occasionally, until crispy all over, about 10 minutes.
Transfer the rabbit to a large plate.
Add the wine to the skillet and cook over moderately high heat, scraping up any browned bits on the bottom of the pan. Pour the wine into a cup, wipe out the skillet.
Add the remaining 1/4 cup olive oil to the skillet. Add the onion, carrot and celery and cook over moderate heat, stirring occasionally, until softened, about 8 minutes. Add the tomato paste and and rosemary and cook, stirring, until the tomato paste begins to brown, about 5 minutes.
Add the rabbit and any accumulated juices along with the reserved wine to the skillet and cook, stirring occasionally, until sizzling, about 3 minutes. Add 2 cups of the stock, season with salt and pepper and bring to a boil. Cover partially and cook over low heat for 30 minutes. Add the olives and the remaining 2 cups of stock and cook until the sauce is slightly reduced and the rabbit is tender, about 20 minutes longer. Discard the rosemary.

Heat oven to 275F.
Set 4 ramekins into a large oven-safe baking dish.
Whisk the duck egg yolks and sugar in a medium bowl, until yolks are slightly thickened and pale yellow in color. Add cream to egg yolk mixture and stir to combine.
Pour custard mixture into prepared ramekins. Add enough hot water to the baking dish to come halfway up the sides of the ramekins.
Carefully place dish in the oven, bake for 35 to 40 minutes, until custards are just set.
Remove baking dish from oven and let the custards cool to room temperature. Then cover with plastic wrap and transfer to refrigerator until fully chilled.

GRAPEFRUIT ELDERFLOWER SPARKLER and TANGERINE LIME SPARKLER
I can't think of the last time I went to the theatre to see a movie - it's awful and seems un-American, I know! But when I have a sitter for the kids, I am more interested in dinner, drinks and uninterrupted conversation, and my husband always volunteers to take the kids to see the kid movies.
Consequently, I'm clueless about the Oscar nominations, so if I watch the show tonight, it will be with a classic, red carpet worthy champagne style of cocktail, as opposed to a fun movie themed drink.
GRAPEFRUIT ELDERFLOWER SPARKLER
1 ounce elderflower liqueur
1 ounce chilled pink grapefruit juice
3 ounces chilled sparkling wine
Combine the elderflower liqueur and grapefruit juice, top with the sparkling wine.

1/2 cup sugar
1 tablespoon rainbow peppercorns
2 slices fresh ginger
ice
2 tablespoons lemon juice
2 ounces bourbon
In a pan, simmer the sugar with 1/2 cup water, stirring, until sugar dissolves. Off the heat, steep the peppercorns and ginger until cool, strain.
Fill a glass with ice, and 1 tablespoon of syrup, lemon juice and bourbon.
Enjoy!
MAINBRACE COCKTAIL

TRAVEL TUESDAY - EUREKA SPRINGS, ARKANSAS
Eureka Springs is recognized as a Favorite Family Destination - and we have definitely taken the kids, and various family friends to Thorncrown Chapel, Turpentine Creek Wildlife Refuge, Quigley's Castle, War Eagle Mill, Cosmic Cavern and Onyx Cave. However, this weekend was just for my husband and me - and the Rotary Conference, which was the reason we were in town, and staying at the Basin Park Hotel.
It was the perfect weekend escape, the Victorian homes were beautiful with their dusting of snow and after asking a couple of friends who live in Eureka Springs for suggestions of places to eat and go, I was ready and excited to explore the town.
I had a rare and wonderful day to myself, and began my adventures at Fresh, on Main Street. Tucked in an adorable area called The Shoppes on North Main, they are a farm-to-table restaurant and had a gorgeous menu filled with soups, salads, sandwiches and freshly squeezed juices. I enjoyed my perfectly dressed spinach and arugula salad, seated by the generous windows, in the lovely, welcoming atmosphere. Complete with bar and exquisite service, it could not have been better.
There are many great Antique stores in Eureka Springs, and one of my favorite is The Barn Shoppes. I picked up a gorgeous antique necklace and a jar of Lavender Port Wine Jelly, then popped down the road to W.T Fockers Discount Outlet, and across to 512 Village Circle, the address of Fresh Harvest.
This is an incredible store, filled with canisters of oils and vinegars, each available for tasting - and every one I tried was marvelous!! This is the second time I have been here, and I have trouble deciding which flavorful product I want to take home. I finally chose the Violet Balsamic, Lavender Balsamic, Toasted Sesame Oil and Arbosana Olive Oil.
By this time, my husband was out of the conference, so I met him at the hotel, and wanting exercise and fresh air, we walked down the main street, making our way around the Historical Loop past the Crescent Hotel, and Ermilios Italian restaurant.
On our way back to the hotel, we stopped at StoneHouse for an amazing cheese plate and a fortifying glass of wine. It is always such a pleasure to see Rob and Amanda, the absolutely fabulous owners - this wine bar should not be missed!! We have been made to feel welcome (as I know everyone who steps foot into this stunning place is) from our very first visit here a couple of years ago to celebrate our anniversary.
Reservations for dinner had been made at the elegant Grand Taverne restaurant. My husband and I had dined here, when it was Chez Charles, and we were first dating.
Their cocktails were incredible, and we ordered a selection of appetizers to accompany my Negroni and my husbands Gin Martini.
The pan seared scallop with lobster butter sauce was out of this world, and we really enjoyed the uniqueness of the grilled buffalo mozzarella wrapped in proscuitto and romaine with sun dried tomato vinaigrette. The grilled romaine salad and sesame encrusted tuna carpaccio were great as well, and as I had found at every restaurant and store I had been to throughout this memorable weekend - the service was excellent.

It was the perfect weekend escape, the Victorian homes were beautiful with their dusting of snow and after asking a couple of friends who live in Eureka Springs for suggestions of places to eat and go, I was ready and excited to explore the town.

This is an incredible store, filled with canisters of oils and vinegars, each available for tasting - and every one I tried was marvelous!! This is the second time I have been here, and I have trouble deciding which flavorful product I want to take home. I finally chose the Violet Balsamic, Lavender Balsamic, Toasted Sesame Oil and Arbosana Olive Oil.

On our way back to the hotel, we stopped at StoneHouse for an amazing cheese plate and a fortifying glass of wine. It is always such a pleasure to see Rob and Amanda, the absolutely fabulous owners - this wine bar should not be missed!! We have been made to feel welcome (as I know everyone who steps foot into this stunning place is) from our very first visit here a couple of years ago to celebrate our anniversary.

DRY MANHATTAN and PORT WINE COCKTAIL
While at a friends house for cocktails one evening, the ladies were served bourbon over huge round ice balls. I was intrigued by this different and unique way to present a beverage, and immediately ordered a pair of spherical ice molds for my husband for Christmas.
DRY MANHATTAN
2 ounces bourbon
1 ounce dry vermouth
5 drops angostura bitters
ice
Pour bourbon, vermouth and bitters over ice.

While cooking before and after the holidays, I incorporated fresh cranberries, dried cranberries, cranberry juice, and cranberry sauce!
CRANBERRY POMEGRANATE COSMOPOLITANS
2 cups vodka
1 cup orange liqueur
1 cup cranberry juice cocktail
1/2 cup pomegranate juice
1/2 cup freshly squeezed lime juice
Combine the vodka, orange liqueur, cranberry juice, pomegranate juice and lime juice in a large pitcher. Fill a cocktail shaker half full with ice, pour the cocktail mixture in and shake for a full 30 seconds. Pour into martini glasses.

TURKEY MEATBALLS IN CRANBERRY BARBECUE SAUCE
1 can (16 ounces) whole berry cranberry sauce
1/2 cup barbecue sauce
2 egg whites
1.25 pounds lean ground turkey
2 green onions, chopped
2 teaspoons grated orange peel
1 1/2 teaspoons soy sauce
1/2 teaspoon freshly ground black pepper
Combine cranberry and barbecue sauces in a slow cooker. Cover, cook on high for 20 to 25 minutes, or until cranberry sauce melts and is heated through.
Meanwhile, place egg whites in a medium bowl, beat lightly. Add turkey, green onions, orange peel, soy sauce and pepper. Mix until well blended. Shape into meatballs.
Spray a skillet with cooking spray, heat over medium heat 8 to 10 minutes or until meatballs are no longer pink in the center, turning to brown evenly. Add to heated sauce in the slow cooker, stir gently to coat.
Turn the slow cooker to low, cover and cook for 3 minutes. Remove meatballs to a serving platter.

CRANBERRY AND LIME LEAF DRUNKEN CHICKEN
1 roasting chicken, giblets removed
2 cups cranberry juice
1 (750 milliliter) bottle of red wine
zest and juice from 2 oranges
zest and juice from 2 lemons
1 cup fresh cranberries
1/4 cup kaffir lime leaves, finely chopped
2 tablespoons lemongrass paste
2 tablespoons ginger paste
2 tablespoons whole black peppercorns
1 tablespoon whole black peppercorns
1 tablespoon salt
At least 8 hours before serving, place all ingredients in a bowl, large enough to hold chicken and liquid. Cover and refrigerate at least 6 hours or overnight. When ready to cook, heat oven to 400F.
Pour marinating mixture through a sieve. Discard liquid, and put solid remainder in chicken cavity.
Place chicken in a roasting pan and cook uncovered until an internal thermometer reads 160F and skin is golden and crisp 1 1/2 to 2 hours.
Let chicken sit for 10 minutes before carving.

2 tablespoons maple flavored pancake syrup
1/2 (14 ounce) package of coleslaw blend
1 apple, chopped
1/2 cup dried cranberries
Mix all ingredients together.

ROASTED CARROTS WITH DRIED CRANBERRIES AND SMOKED ALMONDS
7 carrots, peeled and cut into slices
2 tablespoons honey
2 tablespoons olive oil
1 teaspoon dried thyme leaves
1/4 cup chopped shallots
1/2 cup dried cranberries
1/3 cup smoked almonds, coarsely chopped
Heat oven to 400F.
Place carrots in medium baking dish and drizzle with honey and olive oil. Sprinkle with thyme and toss to coat. Sprinkle with shallots and dried cranberries. Bake 15 to 18 minutes, or until carrots are tender. Sprinkle with smoked almonds.

Bake for 30 minutes.

SPARKLING CRANBERRIES
Cook 1 cup of pure maple syrup in a saucepan over medium-low heat, 1 to 2 minutes. (Don't let the syrup get too hot or cranberries will pop). Remove from heat, stir in 2 cups of fresh cranberries.
Cover and chill 8 to 12 hours. Place 1 cup of sugar in a large bowl. Drain cranberries in a colander (about 15 minutes). Add 4 to 5 cranberries at a time to the sugar, gently toss to coat.
Repeat with remaining cranberries. Place cranberries in a single layer on a parchment lined baking sheet. Let stand until completely dry.

TRAVEL TUESDAY - LAKE OUACHITA - MY CLEMENTINE and CHUNKY GUACAMOLE and CRAB TOAST CANAPES and SALMON CAKES WITH GREENS and RETRO SPINACH DIP AND PUMPERNICKEL SPEARS
Every summer we take a lake vacation with dear, wonderful friends from Louisiana.
The first year we borrowed a friends cabin, but as our families grew larger, we started renting houses around Beaver Lake. Once our kids were older and safe on a boat without our constant supervision, and after one unfortunate incident with bed bugs, we decided to try spending our week actually on the lake, and rented a house boat.
The last few years, we have met on an 80 foot boat on Lake Ouachita. It is a beautiful, clear lake, filled with islands, with very minimal build up around the shore. We move the boat to a new cove every day, and it is very peaceful. There is not much else to do but read, relax and be out on the water (we take our ski boat and our friends supply lake toys - a canoe, inflatable trampoline, inner tubes), and the Mamas go into town for a day of flea marketing and antique shopping.
We take turns cooking, and this year we decided to put together a cocktail party, and served these little bites.
MY CLEMENTINE
14 ounces vodka
12 ounces fresh clementine juice
6 ounces fresh lime juice
6 ounces Aperol
4 ounces agave nectar
12 ounces chilled club soda
In a pitcher, combine the vodka, clementine and lime juices, Aperol and agave. Stir well.
Refrigerate until chilled, 1 hour. Fill a cocktail shaker with ice. Working in batches and adding fresh ice, shake well and strain into 8 ice-filled collins glasses.
Stir 1 1/2 ounces of club soda into each glass.

Tortilla chips for serving

1 cup mayonnaise
1 cup sour cream
salt and freshly ground black pepper
6 heads of endive, leaves separated
Cut the bread into small cubes. In a small skillet, toast the cubes with the olive oil over medium-low heat, stirring often, for about 5 minutes. Let cool.
In a food processor, pulse the spinach, green onions, mayonnaise and sour cream until almost smooth, season with salt and pepper.
Spoon the spinach mixture onto the endive spears and top with the bread.

CRAB TOAST CANAPES
1 baguette, cut crosswise into 1/2 inch slices
5 tablespoons of olive oil, divided
1 pound lump crab meat
2 tablespoons finely chopped shallots
2 teaspoons finely grated lemon zest
1 tablespoon fresh lemon juice
2 teaspoons finely chopped dill
salt and freshly ground black pepper to taste
Heat oven to 350F. Arrange baguette slices on a large baking sheet and drizzle with 2 tablespoons of olive oil. Bake until golden, 8 to 10 minutes.
In a medium bowl, fold together crab, 3 tablespoons of olive oil, shallots, lemon zest and juice and dill.
Season to taste with salt and pepper. Spoon onto baguette slices.

SALMON CAKES WITH GREENS
1/4 cup mayonnaise
1/4 cup plus 1 tablespoon chopped shallots
2 teaspoons Dijon mustard, divided
1/2 cup buttermilk
1 1/2 teaspoons fresh lemon juice
1 pound salmon fillet, skin removed and chopped
2 eggs
5 tablespoons drained capers
1/2 cup breadcrumbs
1/4 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons olive oil
8 cups mixed greens
Combine mayonnaise, 1 tablespoon shallots, 1 teaspoon mustard, buttermilk and lemon juice in a bowl, set aside.
Combine salmon, eggs, 1/4 cup shallots, capers, breadcrumbs, 1 teaspoon mustard, salt and pepper in another bowl, mix well. Shape into patties. Heat oil in a large skillet over medium heat. Cook salmon cakes until bottom is golden, about 6 minutes, flip and cook until golden, 5 minutes more.
Divide salad among plates, top with salmon cakes and drizzle with dressing.

HIGH FIDELITY and APPLE AND WATERCRESS SALAD WITH WALNUT VINAIGRETTE
A party was planned in our yoga class, as an early Christmas gift to ourselves. We started with Mimosas, moved through our class, then gathered for cocktails and lunch - salad and a fabulous egg dish our instructor had made.
HIGH FIDELITY
1 ounce grapefruit juice
1 ounce tequila
1 ounce Aperol
Champagne to top
Shake the grapefruit juice, tequila and Aperol over ice. Strain into a flute and top with Champagne.

2 1/2 tablespoons white wine vinegar
1 shallot, finely chopped
2 teaspoons Dijon mustard

1 bunch of watercress, stems discarded
1 bunch arugula, stems discarded
2 celery ribs, thinly sliced

In a bowl, whisk the vinegar with the shallot and mustard. Whisk in the walnut and olive oils and season with salt and pepper.
In a medium bowl, toss the watercress and arugula with the dressing, celery, apple and walnuts. Season with salt and pepper.

Shake the grapefruit juice, tequila and Aperol over ice. Strain into a flute and top with Champagne.

APPLE AND WATERCRESS SALAD WITH WALNUT VINAIGRETTE
2 1/2 tablespoons white wine vinegar
1 shallot, finely chopped
2 teaspoons Dijon mustard
2 tablespoons walnut oil
2 tablespoons olive oil
salt and freshly ground black pepper
1 bunch of watercress, stems discarded
1 bunch arugula, stems discarded
2 celery ribs, thinly sliced
1 apple, diced
1/3 cup walnuts, coarsely chopped
In a bowl, whisk the vinegar with the shallot and mustard. Whisk in the walnut and olive oils and season with salt and pepper.
In a medium bowl, toss the watercress and arugula with the dressing, celery, apple and walnuts. Season with salt and pepper.

ROSEWATER CUPID and CHUTNEY CHICKEN SALAD and CURRIED CRAB DIP and MANGO SHRIMP WITH CILANTRO YOGURT SAUCE and CAULIFLOWER AND POTATOES and CHICKEN CURRY
On a recent evening when friends came for dinner, we settled on an Indian theme.
We served the appetizers outside, then moved in to the dining room for a chicken curry and a goat curry, accompanied by naan bread, poppadoms and chutney.
ROSEWATER CUPID
1/4 ounce elderflower liqueur
3 drops rose water
bitters
1 ounce gin
rose champagne
In a champagne glass, add 1/4 ounce elderflower liqueur, 3 drops rose water, and a dash of bitters. Add 1 ounce chilled gin and top off with chilled rose champagne.

CHUTNEY CHICKEN SALAD
1/3 cup slivered almonds
1/2 cup mayonnaise
1/4 cup greek yogurt
1/3 cup mango chutney
1 tablespoon curry powder
1 teaspoon salt
1/4 teaspoon freshly ground pepper
5 cups diced cooked chicken
4 green onions, finely chopped
mini fillo tart shells
Heat oven to 350F. Bake almonds in a single layer in a shallow pan 5 to 7 minutes or until toasted and fragrant, stirring halfway through. Cool 20 minutes.
Whisk together mayonnaise, greek yogurt, mango chutney, curry powder, salt and pepper. Add chicken, green onions and toasted almonds, and toss until well blended. Cover and chill 2 to 24 hours.
Fill tart shells with chicken salad just before serving.

In a skillet, melt the butter. Add the onion and ginger and cook over moderate heat, stirring occasionally, until softened, about 7 minutes. Add the curry powder and cook, stirring, for 1 minute. Add the chutney, cream cheese, mayonnaise and lime juice and cook, stirring, until smooth and creamy, about 1 minute. Stir in the green onions, cilantro and crab. Season with salt and pepper and cook until the dip is heated through, about 1 minute. Transfer to a shallow bowl, serve with bread and chips if desired.

1/4 cup cashews
1 tablespoon minced fresh ginger
4 garlic cloves
1 jalapeño, halved and seeded
1 tablespoon mustard seeds
1 teaspoon garam masala
1 teaspoon ground turmeric
1/2 cup mango nectar
2 tablespoons lemon juice
1 cup plain yogurt
salt
1 1/2 pounds large shrimp
2 tablespoons butter, melted
CILANTRO AND YOGURT SAUCE
2 cups cilantro leaves
1 cup mint leaves
1 jalapeño, seeded and coarsely chopped
4 garlic cloves, crushed
1 teaspoon ground cumin
1 tablespoon fresh lemon juice
1 cup plain yogurt
salt and freshly ground black pepper
In a blender, combine the cashews, ginger, garlic, jalapeño, mustard seeds, garam masala, and turmeric and pulse until the ginger and garlic are finely chopped. Add the mango nectar and lemon juice and puree until smooth. Add the yogurt and 1 tablespoon of salt and pulse to blend. Pour the mixture into a large bowl. Add the shrimp and toss to coat. Refrigerate for 2 hours.
Light a grill. Thread the shrimp on skewers. Drizzle with melted butter and sprinkle with salt. Oil the grate and grill the shrimp over high heat, turning occasionally, until lightly charred and cooked through, about 8 minutes. Serve the shrimp with the Cilantro and Yogurt Sauce.

In a blended, combine the cilantro, mint, jalapeño, garlic, cumin and lemon juice and puree to a paste. Add the yogurt and puree until smooth. Season to taste with salt and freshly ground black pepper.

4 tablespoons vegetable oil
1 large head of cauliflower cut ito 1 1/4 inch florets
1 1/2 teaspoons cumin seeds
1 1/2 teaspoons ground cumin
3/4 teaspoon ground coriander
1/2 teaspoon ground turmeric
2 hot serrano peppers, finely chopped
4 potatoes, boiled, peeled, and diced
salt to taste
Heat oil in a tall sided saucepan, and stir fry cauliflower. Make sure it remains slightly crisp, but also browns in places. Remove cauliflower, add more oil to the saucepan, if necessary, and add cumin seeds, ground cumin, coriander and turmeric. Stir fry mix about 30 seconds. Return cauliflower to saucepan, add serrano pepper and potatoes and stir until cauliflower and potatoes are evenly coated. Season to taste with salt.

4 chicken breasts
2 carrots, coarsely chopped
2 celery ribs, coarsely chopped
2 onions, chopped
4 cloves of garlic (all peeled, 2 minced)
2 tablespoons grated ginger
1 bay leaf
1 lime, sliced
3 cardamom pods
salt
2 tablespoons olive oil
2 tablespoons butter
1 apple, peeled and chopped
2 tablespoons curry powder
3 tablespoons flour
1/2 cup mango chutney
Place the chicken in a medium pot. Add the carrots, celery, 1 onion, whole peeled garlic, 1 tablespoon ginger, bay leaf, lime and cardamom pods, then cover with cold water. Bring to a boil, add a couple of pinches of salt and reduce the heat to a low simmer. Gently poach the chicken for about 35 to 40 minutes or until it is cooked through.
Strain the chicken, reserving the stock. When the chicken is cool enough to handle, chop into bite sized pieces.
Wipe out the stock pot and place back on heat. Add the olive oil and the butter. Add the chopped onion, remaining ginger, apple and curry powder. Once the onion and apple are just tender, sprinkle in the flour, stir then whisk in reserved stock until desired consistency is reached. Bring the mixture to a light simmer to thicken. Add in the chicken and the mango chutney.

SAGE CRANBERRY PUNCH
Friends hosted "cocktails for a cause", a fun and enjoyable reminder that this time of year is about a joyful time with wonderful people and giving what you are able to.
I love this warm and convivial evening. Everyone brings something for the family being sponsored, a cocktail, and if they remember, the recipe. The cocktails are placed around the room for people to sample, and are paired with delicious food, prepared by our talented hostess.
SAGE CRANBERRY PUNCH
Boil 1 1/2 cups of water and 1 cup of sugar until the sugar is dissolved. Add the zest of 1 orange and 4 sprigs of sage. Steep for 45 minutes to an hour, and let cool.
In a large pitcher, combine 4 cups of cranberry juice, 1 cup of vodka, 1/4 cup Grand Marnier and the juice of the orange. Strain the sugar-sage mixture and add, stirring to mix.
Let chill and serve.
Enjoy!
NOTE: If I was to make this again, I would cut down on the sugar and increase the vodka!
