Ever since our first Valentines together, my husband and I have cooked at home. For quite a few years we have had a wonderful and very dear couple join us - they met at our house and then became engaged here - and as our culinary skills have increased, so have the number of people we have included.
We usually begin the evening with appetizers and cocktails upstairs, then we negotiate the stairs down to the wine cellar for the first course, main course and appetizer.
This years meal began with a Cedar Planked Brie, continued with a simple green salad and moved on to a fragrant, delicious leg of lamb, that my husband prepared, before concluding with Chocolate Meringues.
As fantastic as everything was, I must admit, I couldn't wait for the next day - for thinly sliced lamb on soft, fresh bread, with butter, ketchup and a sprinkle of sea salt, which is how I loved it while growing up in New Zealand.
I anticipated the left overs as much as I look forward to our special celebration each year - a lot!!
CEDAR PLANKED PECAN, BOURBON AND BROWN SUGAR GLAZED BRIE
1 cedar grilling plank
1/4 cup brown sugar
1/4 cup chopped pecans
2 tablespoons dried apricots, chopped
1 tablespoon bourbon
1 round of brie
2 tablespoons blackberry jam
Soak the cedar plank in water for 30 minutes.
Meanwhile, in a bowl, stir together the brown sugar, pecans, dried apricots and bourbon.
Heat oven to 400F.
Place the brie on the wet cedar plank. Spread the jam over the top of the cheese. Spoon the fruit and nut mixture over the jam.
Place the plank with the brie on a cookie sheet in the oven, bake for 10 minutes, or until the brie is slightly softened and the sugar melts.
Serve with grapes and sliced apple and pear, if desired.

GREENS AND RADISH SALAD WITH WARM RED WINE VINAIGRETTE
1 head of butter lettuce, leaves torn
1 head of red leaf lettuce, leaves torn
thinly sliced radishes
1/3 cup olive oil
3 tablespoons chopped shallot
1 cup red wine
5 tablespoons red wine vinegar
1 tablespoon whole-grain mustard
2 teaspoons salt
2 teaspoons freshly ground black pepper
Place lettuce and radishes on individual serving plates.
In a small saucepan, heat oil over medium-high heat. Add shallot and cook for 4 to 5 minutes, or until tender. Add red wine, and bring to a simmer. Cook for 6 minutes. Pour mixture into the container of a blender. Add vinegar, mustard, salt and pepper. Pulse until mixture is emulsified and smooth. Serve warm over salad.

CHOCOLATE MERINGUES AND STRAWBERRIES
8 ounces of frozen strawberries, thawed
3/4 cup plus 2 tablespoons of sugar, divided
1 teaspoon balsamic vinegar (I used a violet balsamic)
3 egg whites at room temperature
1/4 teaspoon cream of tartar
5 teaspoons cocoa powder, sifted
3/4 cup cream
2 tablespoons confectioner's sugar
2 ounces dark chocolate, shaved
Heat oven to 325F.
In a bowl, combine strawberries, 2 tablespoons sugar and vinegar. Using an electric mixer, beat egg whites until peaks form. Add cream of tartar and a pinch of salt, beat to combine. Slowly add remaining 3/4 cup sugar, beating until stiff peaks form. Sprinkle cocoa over egg mixture, whip until just combined. Spread into 6 mounds, 3 inches each, on a parchment paper-lined baking sheet.
Place in oven, reduce temperature to 300F and bake until meringues are dry on the outside and soft in the center, about 50 minutes. Cool on sheets.
Using an electric mixer, whip cream and confectioners sugar. Top meringues evenly with berry mixture, whipped cream and chocolate.

LAMB MINT AND FETA MEATBALLS and CORNMEAL ROSEMARY CAKE WITH PINE NUTS AND ORANGE GLAZE
One of my very favorite events during Teacher Appreciation week, is the luncheon. I absolutely love to organize it, and the parents at the school really make an incredible effort - we want to make our teachers feel special and appreciated by providing a spectacular spread that can be leisurely (that's the idea anyway) enjoyed! This year it was held at a beautiful historic home, nestled among peaceful, seemingly endless gardens - it was a beautiful, warm day, and the tables were set up out on the gorgeous porch. We settled upon a Mediterranean theme, and, as always, the parents were excited and able to provide many fabulous dishes.
LAMB MINT AND FETA MEATBALLS
1 slice of white bread
1/2 pound of ground lamb
1/4 cup finely chopped onion
1 large egg, lightly beaten
1 1/2 tablespoons of finely chopped fresh mint, plus extra for serving
1 tablespoon grated feta cheese
2 cloves of garlic, minced
1 teaspoon finely chopped fresh oregano
1/2 teaspoon ground cinnamon
salt and freshly ground black pepper
1/2 cup flour
Remove the bread crusts. Put the bread slices in a small bowl and add enough water to soak the bread through (about 1/4 cup). With your hands, squeeze the water out of the bread and tear it into small pieces into a medium bowl. Add the lamb, onion, egg, mint, cheese, garlic, oregano, cinnamon, 1 teaspoon of salt and 1/4 teaspoon of pepper to the bread and mix thoroughly. Cover and refrigerate for at least 2 hours or overnight (I was running behind, so mine were in the refrigerator for about an hour).
With the palms of your hands, roll the meat mixture into 1-inch balls. Put the flour into a bowl, and dredge the meatballs through the flour, until well covered. Transfer to a baking sheet, shaking off excess flour.
Heat the oven to 400F.
Bake the meatballs for 20 minutes, or until cooked all the way through (the recipe called for frying them - which I know would have been delicious - I was trying to be a little healthier).
Arrange the meatballs on a platter, sprinkle with mint and serve warm.

FOR THE CAKE
1 1/2 cups flour
3/4 cup yellow cornmeal
1/3 cup coarsely chopped toasted pine nuts
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely grated orange zest
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup mascarpone, at room temperature
4 eggs
1 1/3 cups sugar
1/2 cup unsalted butter, melted
FOR THE ORANGE SYRUP
1/2 cup fresh orange juice
3 tablespoons sugar
FOR THE ORANGE GLAZE
1 tablespoon whole fresh rosemary leaves (stripped from the stem but not chopped)
1 1/2 cups confectioners sugar
5 tablespoons cream
2 tablespoons fresh orange juice
1 teaspoon grated orange zest
MAKE THE CAKE
Heat oven to 350F. Butter a 9X2 inch round cake pan, line the bottom with a round of parchment, and butter the parchment.
In a medium bowl, whisk together the flour, cornmeal, pine nuts, rosemary, orange zest, baking powder, and salt.
In a large bowl, briefly whisk the mascarpone to loosen it. Add the eggs one at a time, whisking to combine. Add the sugar and whisk until smooth. Using a rubber spatula, fold the dry ingredients, in two batches, into the wet ingredients, mixing until smooth. Stir in the melted butter with the rubber spatula until blended.
Scrape the batter into the prepared pan, spread evenly, and bake until the entire top of the cake is a rich golden brown and springs back when pressed gently in the center, 40 to 45 minutes. A skewer inserted into the middle of the cake should come out looking a bit moist, and the sides of the cake may have begun to pull away from the pan.
MAKE THE ORANGE SYRUP
While cake is baking, combine the orange juice and sugar in a small saucepan over medium heat and cook for a few minutes, stirring occasionally, until the sugar dissolves. Remove from the heat.
Let the cake cool in its pan on a rack for 5 minutes. Run a small knife around the cake. Set an inverted plate over the cake pan and tip upside down. The cake should slide right out onto the plate.
Peel off the parchment, and place the cake right side up on serving plate.
With a wooden skewer, poke a few dozen holes all over the top of the cake. While the cake is still warm, brush the cake with the warm orange syrup. Continue brushing for several minutes, giving the syrup time to sink into the cake, until you've used all the syrup. Let the cake cool completely.
MAKE THE ORANGE GLAZE
Bring a small saucepan of water to a boil. Have ready a small bowl of ice water. Put the rosemary leaves in a small sieve and dip into the boiling water to blanch them for 1 minute. Drain the rosemary leaves and immediately set them (still in the sieve) into the ice water. Drain and spread the rosemary leaves on a paper towel to dry (personally I think you can skip this step - I don't think the rosemary leaves added anything to the cake). In a bowl, whisk the confectioners sugar, cream, and orange juice until smooth and then whisk in the blanched rosemary (if using) and the zest.
When the cake is cool, pour the glaze over the top of the cake. Let sit for an hour before cutting the cake, the glaze may or may not become firm, depending on the weather.

GARAM MASALA DEVILED EGGS and MUSHROOM STRATA and BAKED HAM WITH HONEY APRICOT GLAZE
Happy Easter!!
GARAM MASALA DEVILED EGGS
6 eggs
4 tablespoons mayonnaise or to taste
1 to 2 teaspoons garam masala
1/4 teaspoon ground red pepper
salt and freshly ground black pepper to taste
smoked paprika
chives
Place eggs in a saucepan with enough cold water to cover by 1 inch.
Bring to a boil and immediately remove from heat. Let stand 10 minutes. Transfer eggs to a bowl filled with cold water, to cool completely.
Once cool, remove shells. Cut each egg in half lengthwise and remove the yolks to a bowl.
Mash yolks with mayonnaise, garam masala, red pepper, salt and pepper.
Spoon or pipe mixture into egg whites, dividing mixture evenly. Sprinkle with paprika and top with chopped chives.

MUSHROOM STRATA
2 pounds of fresh mushrooms, sliced
1 cup chopped onion
1 cup chopped red bell pepper
1 cup chopped celery
salt and pepper to taste
12 slices of white bread, crusts removed, buttered, and cut into cubes
4 eggs
1 cup milk
3/4 cup mayonnaise
1 1/2 cups grated sharp cheddar cheese
2 cans cream of mushroom soup
Saute vegetables in about 2 tablespoons of olive oil, season with salt and pepper and put into the bottom of a 9 by 13 casserole dish.
Add 10 slices of the cubed bread and mix.
Combine eggs, milk and mayonnaise, season to taste with salt and pepper, and pour over the casserole.
Sprinkle one cup of cheese over the top.
Refrigerate 8 hours or overnight.
Pour the cream of mushroom soup over the top, sprinkle with remaining bread cubes and grated cheese.
Bake at 350F for about 1 hour.
Enjoy!
BAKED HAM WITH HONEY APRICOT GLAZE
1 (5 to 7) spiral sliced, fully cooked smoked ham
1/2 cup honey
3 ounces orange juice concentrate, thawed
3 tablespoons soy sauce
3 tablespoons apricot jam
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
Heat oven to 325F.
Place ham on rack in a shallow roasting pan. In a medium bowl, make a glaze by mixing together the honey, orange juice concentrate, soy sauce, apricot jam, nutmeg and cloves. Set aside.
Bake ham for 30 minutes, then pour the glaze over the ham. Bake for 1 hour and 15 minutes, or until internal temperature reaches 140 degrees.
Remove from oven, let stand 5 minutes and serve.

ROASTED BANANA SCONES WITH PEANUT BUTTER GLAZE
After Christmas, our family rented an RV and took a trip down South. We stopped for lunch in Tupelo, Mississippi and visited the birthplace of Elvis Presley. Having to explain to the kids who he was took a little of the fun out of it, and they really couldn't have cared less about the King of Rock and Roll.
It is rumored Elvis's favorite food was a peanut butter and banana sandwich, here is an interesting take on the combination. I roasted 3 bananas, but was short on butter so decided to make 1/2 the recipe - the bananas by them selves were absolutely delicious, and made for a sweet treat for breakfast.
My husband commented on how moist these scones were and my daughter just kept correcting my pronunciation of scones! I am sure Elvis Presley never had his accent ridiculed.
ROASTED BANANA SCONES WITH PEANUT BUTTER GLAZE
3 bananas, sliced
2 tablespoons melted butter
2 tablespoons light brown sugar
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup light brown sugar
1/2 cup butter, cut into small pieces
2 eggs
1 cup ricotta cheese
1 egg, beaten
GLAZE
1/4 cup peanut butter
2 tablespoons butter
1/2 cup powdered sugar
1/4 teaspoon vanilla
Heat oven to 325F. Place bananas in a medium baking dish. Drizzle with 2 tablespoons melted butter and sprinkle with 2 tablespoons brown sugar and bake for 30 minutes, stirring occasionally, until bubbly and caramelized. Let cool.
Increase oven temperature to 375F. Spray two large baking sheets with nonstick cooking spray. In a large mixing bowl, stir together flour, baking powder, salt and 1/3 cup light brown sugar. Cut in butter until mixture resembles coarse crumbs.
In a medium bowl, beat together 2 eggs, the ricotta cheese and the roasted bananas with a hand mixer until mixed. Mixture will be lumpy. Add banana mixture to the flour mixture and stir by hand until just combined.
Drop dough into 12 equal mounds on baking sheets, spacing about 2 inches apart. Brush tops with the beaten egg (I skipped this step). Bake 25 to 30 minutes or until golden brown.
About 5 minutes before scones come out of the oven, make the glaze. Place the peanut butter and 2 tablespoons of butter in a small, heavy saucepan over medium heat, stirring often until melted and smooth. Remove from the heat and whisk in the powdered sugar and vanilla until smooth. When scones come out of oven, place them on a wire rack over a baking sheet and drizzle with the glaze (my glaze turned out to be more of an icing consistency, so there was spreading instead of drizzling).

When scones come out of oven, place them on a wire rack over a baking sheet and drizzle with the glaze (my glaze turned out to be more of an icing consistency, so there was spreading instead of drizzling).
