While Mum was visiting last summer, she spoiled her Grandchildren with lovely breakfasts each morning. Made from scratch pancakes and sausage, delivered on a tray to their room, while they enjoyed their morning in bed.
I thought I had better make more of an effort to provide interesting and delicious meals in the morning - although my kids have to come out to the kitchen to serve themselves.
BANANA BREAD
1/2 cup butter, at room temperature
1 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup mashed, very ripe bananas
1/2 cup sour cream
1 teaspoon vanilla
1/2 cup chocolate chips
Heat oven to 350F.
Butter a 9 by 5 inch loaf pan, set aside.
In an electric mixer, fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture and mix until just combined. Add bananas, sour cream, and vanilla, mix to combine. Stir in chocolate chips, and pour into prepared pan.
Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour.
Let rest in pan for 10 minutes, then turn out onto a rack to cool.

LEMON BLUEBERRY RICOTTA POUND CAKE
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup unsalted butter
1 cup ricotta cheese
1 1/2 cups sugar
3 eggs
1 teaspoon vanilla extract
1 tablespoon lemon zest
1 1/2 cups blueberries
Heat oven ot 325F.
Prepare a 9 by 5 inch pan, greasing the inside with butter, or baking spray.
In a medium bowl, whisk together the flour, baking powder, and salt.
Use an electric mixer to beat together the butter, ricotta and sugar, on high speed for 3 minutes, until pale and fluffy.
Add the eggs one at a time, mixing on medium speed for one minute, after each addition. Mix in the lemon zest and vanilla extract.
Remove the bowl from the mixer and stir in the dry ingredients in 3 or 4 additions, until just incorporated. Do not over mix. Stir in the blueberries.
Pour the batter into the prepared loaf pan. Place on a baking sheet on the middle rack in the oven. Bake for 65 to 70 minutes, or until a wooden toothpick comes out clean. Remove from oven and let cool for 15 minutes in the pan. Run a dull knife around the edge of the cake to make sure it is separated from the pan. Gently remove the cake from the pan and let it cool completely on a wire rack.

Note: I added 1/2 cup more blueberries than the recipe indicated - I like a lot of fruit! But it was too much batter for the loaf pan, so I made muffins with the extra.

SOUR CREAM COFFEE CAKE WITH BROWN SUGAR STREUSEL
FOR THE STREUSEL
3/4 cup flour
1/2 cup packed, light brown sugar
1/2 teaspoon ground cinnamon
1/8 tablespoon salt
4 1/2 tablespoons of unsalted butter
FOR THE CAKE
1/2 cup sour cream, at room temperature
1 teaspoon vanilla extract
2 drops almond extract
1/2 cup unsalted butter, softened
3/4 cup sugar
1 egg yolk, at room temperature
1 egg, at room temperature
1/4 plus 1/8 teaspoon salt
1 1/3 cups cake flour
1 teaspoon baking powder
1/8 teaspoon baking soda
MAKE THE STREUSEL
In a small bowl, stir the flour, brown sugar, cinnamon, and salt. Drizzle the melted butter over the dry ingredients and stir until well combined. The streusel should feel clumpy, not sandy. If it seems dry, add more melted butter.
MAKE THE CAKE
Position a rack in the center of the oven and heat the oven to 350F.
Lightly butter the bottom and sides of an 8-inch square metal cake pan. Line the bottom of the pan with parchment and butter the parchment. Dust the pan with flour, tapping out any excess.
In a small bowl, whisk the sour cream, vanilla and almond extract.
In a large bowl, cream the butter, sugar and egg yolk with a wooden spoon utnil blended, about 20 seconds. Using a whisk, whisk in the whole egg and salt and continue to whisk until the batter is smooth and the sugar begins to dissolve, about 30 seconds. Whisk in the sour cream mixture. Sift the cake flour, baking powder, and baking soda directly onto the batter. Whisk until the mixture is smooth and free of lumps.
Spread the batter evenly in the pan. Sprinkle the streusel over the batter, squeezing it with your fingertips to form small clumps. Bake until puffed and golden and a skewer inserted in the center of the cake comes out with only moist crumbs clinging to it, 28 to 30 minutes. Set the pan on a rack to cool for 15 minutes.
Run a knife between the cake and the sides of the pan. Invert the cake onto the rack and remove the parchment. Invert again onto a serving plate, so the streusel is on top. Let cool at least 10 minutes before serving. This cake is best served warm.

ROASTED BANANA PUDDING CAKE WITH HONEY CREAM AND MACADAMIA NUTS
After being out of town for the week, my husband arrived home around 4pm, just in time for my oldest Sons birthday party. It was one of the easiest, most laid back parties ever! Pizza and a cookie cake and a few friends to spend the night.
I took full advantage of the relaxed atmosphere, and having my husband back in town to supervise the 8 boys, and briefly popped out to meet friends for Magazine Club.
However, as undemanding as my child was, I couldn't NOT cook for my Sons birthday, so our family birthday dinner concluded with this masterpiece of deliciousness (plain whipped cream for the kids).
ROASTED BANANA PUDDING CAKE WITH HONEY CREAM AND MACADAMIA NUTS
CAKE
2 large ripe bananas, unpeeled
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
1/8 teaspoon salt
1 cup sugar
1 egg, lightly beaten
3/4 cup buttermilk
1/2 teaspoon baking soda
1 1/2 tablespoons unsalted butter, melted
2 tablespoons cream
1/2 teaspoon finely grated orange zest
1 cup roasted macadamia nuts, toasted and coarsely chopped
HONEY CREAM
1/4 cup plain yogurt
1/4 cup honey
1/4 teaspoon finely grated lime zest
1/4 teaspoon finely grated orange zest
2 tablespoons Kahlua
2/3 cup cream
MAKE THE CAKE
Heat oven to 350F.
Butter a 7 by 11 inch baking dish. Put the bananas on a rimmed baking sheet and bake for about 45 minutes, until dark and soft. Let the bananas cool, then open the peel and scoop the roasted banana pulp into a large bowl.
Meanwhile, in a medium bowl, whisk together the flour, baking powder, cinnamon, ground cloves, nutmeg and salt.
Using an electric mixer, beat the roasted bananas with the sugar until a puree forms. Then beat in the eggs. In a small bowl, stir together the buttermilk and baking soda, then add to the banana mixture. At low speed, gradually beat in the flour mixture. Gently beat in the melted butter, cream and orange zest.
Spread the batter in the prepared dish and bake for 25 minutes, until a cake tester inserted in the center of the cake comes out clean. Let the cake cool.
PREPARE THE HONEY CREAM
In a small bowl, whisk the yogurt with the honey, finely grated lime zest, finely grated orange zest and the liqueur. In a large bowl, beat the cream until softly whipped. Gently fold in the honey yogurt mixture.
Serve pieces of cake with dollops and honey cream and a sprinkle of macadamia nuts.

POMEGRANATE LIME CAKES and CHOCOLATE POMEGRANATE CAKES and CHOCOLATE POMEGRANATE TORTE

POMEGRANATE LIME CAKES
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
1/2 cup butter, room temperature
2 eggs
3/4 cup pomegranate juice, divided
juice and peel of 1 lime
1/2 cup plain, thick yogurt
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
lime peel to garnish
Heat oven to 350F.
Butter and flour 2 muffin pans, or line with paper liners.
Sift together flour, baking powder, and slat in medium bowl. Beat sugar and butter in large bowl until well blended, about 1 minute. Add eggs, 1 at a time, beating well after each addition. Beat in 1/2 cup pomeganate juice and the lime juice and peel. Beat flour mixture into batter just until blended. Stir in the yogurt.
Evenly divide batter into prepared pans, bake until tester inserted into center of cake comes out clean, about 15 minutes. Let cakes cook about 15 minutes. Meanwhile, sift powdered sugar into medium bowl, whisk in 1/4 cup pomegranate juice, and vanilla. Pour glaze over cakes, sprinkle with lime peel.

In a small bowl, combine the powdered sugar and pomegranate juice. If needed, add a bit of water until you reach a drizzling consistency. Drizzle over cooled cakes.

MAKE THE CAKE

Grate 2 ounces of the chocolate and set aside. Chop the remaining chocolate and combine with the butter and 3 tablespoon s of water in a heatproof bowl. Set the bowl in a skillet of barely simmering water and stir frequently until the mixture is melted and smooth. Set aside.

Bake until a toothpick inserted in the center of the cake comes out smudged with a few moist crumbs, about 25 minutes. Cool in the pan on a rack for 10 minutes. Run a knife around the edge of the cake and invert it onto another rack. Remove the pan and parchment and invert the cake onto the first rack. Let cool completely.
MAKE THE POMEGRANATE JELLY
Grate enough of the apple (including the peel) to yield 3/4 cup. In a medium saucepan, bring the grated apple, pomegranate juice, sugar and cranberries to a simmer over medium heat. Simmer, covered, until the apple is softened and the mixture has thickened a little, about 10 minutes. Uncover and continue to simmer, stirring occasionally at first and then constantly towards the end, until the liquid has evaporated and the mixture is reduced to 3/4 cup, about 5 minutes.
With a rubber spatula, press the pulp through a mesh strainer into a bowl until you can't get any more juice out of the pulp. Scrape all of the juice clinging to the bottom of the strainer into the bowl and discard the pulp in the strainer.
Transfer the cake to a plate. Stir the jelly to blend it, scrape it onto the cake, and spread it evenly over the top. Let the jelly cool until it's set, about an hour.
MAKE THE GLAZE
Put the chocolate, butter, honey and salt in a heatproof bowl set in a skillet of barely simmering water. Stir gently until the chocolate melts and the mixture is perfectly smooth. Remove from the heat and stir in 2 tablespoons of cool water. Let cool to room temperature without stirring. With an offset spatula, spread the glaze over the top and around the sides of the cake.
Garnish with pomegranate seeds.

GERMAN CHOCOLATE CAKE
My husband, who celebrates his birthday right before New Years Eve, requested a German Chocolate Cake to sweeten the transition into another year. We commemorated the occasion with family, as a couple and with friends, and as usual, were ready for a rest as the rest of the world was welcoming and celebrating the New Year!
GERMAN CHOCOLATE CAKE
1/2 cup boiling water
4 ounces sweet German chocolate
2 cups sugar
1 cup butter, softened
4 eggs, separated
1 teaspoon vanilla extract
2 1/2 cups cake flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
4 egg whites, stiffly beaten
FOR THE COCONUT PECAN FROSTING
1 cup sugar
1/2 cup butter
1 cup evaporated milk
1 teaspoon vanilla extract
3 egg yolks, beaten
1 to 1 1/2 cups flaked coconut
1 cup chopped pecans
TO MAKE THE CAKE
Heat oven to 350F.
Grease and flour 3 (9-inch) round pans. (I ended up using just 2 of the layers - or I could have made more frosting).
Combine the boiling water and chocolate in a bowl and stir until chocolate is melted and smooth, set aside to cool.
In a separate bowl, mix sugar and butter until light and fluffy. Beat in egg yolks, one at a time, beat in chocolate and vanilla on low speed.
Mix in flour, baking soda and salt alternately with buttermilk, beating after each addition until batter is smooth.
Beat egg whites to stiff peaks. Fold egg whites into batter. Divide batter among pans. Bake for 35 to 40 minutes, or until a wooden pick inserted near the center cones out clean. Cool and top with coconut-pecan frosting.
TO MAKE THE FROSTING
Mix sugar, butter, milk, vanilla, and egg yolks in saucepan. Cook over medium heat, stirring occasionally, until thick, about 12 minutes.
Take off heat, stir in coconut and pecans. Beat until spreading consistency. Allow to cool and thicken before icing cake.

Grease and flour 3 (9-inch) round pans. (I ended up using just 2 of the layers - or I could have made more frosting).
Combine the boiling water and chocolate in a bowl and stir until chocolate is melted and smooth, set aside to cool.
In a separate bowl, mix sugar and butter until light and fluffy. Beat in egg yolks, one at a time, beat in chocolate and vanilla on low speed.
Mix in flour, baking soda and salt alternately with buttermilk, beating after each addition until batter is smooth.
Beat egg whites to stiff peaks. Fold egg whites into batter. Divide batter among pans. Bake for 35 to 40 minutes, or until a wooden pick inserted near the center cones out clean. Cool and top with coconut-pecan frosting.
TO MAKE THE FROSTING
Mix sugar, butter, milk, vanilla, and egg yolks in saucepan. Cook over medium heat, stirring occasionally, until thick, about 12 minutes.
Take off heat, stir in coconut and pecans. Beat until spreading consistency. Allow to cool and thicken before icing cake.

BLUEBERRY BANANA PANCAKES and LEMON BLUEBERRY SNACK CAKE
My family has been enjoying blueberries for breakfast, plain and folded into cakes. These recipes combine the small blue berry alongside other fruits, with delicious results.
BLUEBERRY BANANA PANCAKES
2 cups flour
1 tablespoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
4 eggs
2 cups buttermilk
4 tablespoons unsalted butter, melted
1 cup blueberries
2 bananas sliced
In a small bowl, whisk the flour with the baking powder, baking soda and salt. In a medium bowl, beat the eggs with the buttermilk. Stir in the flour mixture, then stir in the melted butter and blueberries.
Heat a large skillet over moderately low heat and spray with cooking spray. Scoop tablespoons of the batter into the skillet and lay one banana slice in the center of each pancake. Cook until bubbles appear on the surface, 3 to 4 minutes. Flip the pancakes and cook until golden brown on the second side, 2 to 3 minutes longer.
Dust with confectioners sugar, and serve with butter and maple syrup as desired.

CHOCOLATE BUTTERSCOTCH LAVA CAKE
A friend hosted a "crock-pot" party New Years Eve which I thought was such a fun idea, and immediately began searching for a specific recipe I had been excited to try.
I wasn't able to locate the recipe I had planned to make - a luscious chocolatey dessert, so I ended up taking an appetizer I wasn't thrilled with!
However, while looking through my extensive recipe pile a few days later, I came across the coveted recipe, and when we tried it, it was every bit as delectable as I had imagined!!
CHOCOLATE BUTTERSCOTCH LAVA CAKE
16 1/2 ounce package dark chocolate cake mix
3.9 ounce package chocolate instant pudding mix, divided
1 cup sour cream
1/3 cup butter, melted
1 teaspoon vanilla
3 1/4 cups milk, divided
3 eggs
8 ounce package chocolate covered toffee bits, divided
1 cup butterscotch chips
Measure 1 ounce of the chocolate pudding mix and set aside.
In a large bowl, beat cake mix, remaining pudding mix, sour cream, butter, vanilla, 1 1/4 cups milk and eggs, with an electric mixer at medium speed for 2 minutes.
Stir in 1 cup of the toffee bits. Pour the batter into a lightly greased slow cooker.
In a medium saucepan, heat remaining 2 cups of milk over medium heat for 3 to 5 minutes, stirring frequently, until hot and bubbling. Remove from heat.
Sprinkle remaining chocolate pudding mix over the batter in the slow cooker, and top with the butterscotch chips.
Slowly pour the hot milk over pudding and chips.
Cover and cook on low for 4 1/2 hours. Let stand for 15 minutes.
Top with ice cream or whipped cream and garnish with remaining toffee bits as desired.

FRENCH LAVENDER POUND CAKE and BLUE CHEESE AND ONION DIP WITH LAVENDER and LEMON LAVENDER BARS and LAVENDER AND HONEY SHORTBREAD
A friend organized an evening out with a group of fabulous ladies, for a Holiday Boutique show. I was amused at the entry fee and the available bar, but shopping is definitely more fun with friends and a glass of chardonnay.
I discovered a booth that sold spices, and was immediately entranced. Following a fascinating conversation with the owners, about food and offering suggestions of local restaurants they should try, I purchased lavender and vanilla sugar, fabulous smoked paprika, and curry powder.
I was very excited to try the latest additions to my cooking arsenal, and baked loaves of French Lavender Pound Cake - one to keep and one to share with a friend.
I have also shared the Blue Cheese and Onion Dip with Lavender, Lemon Lavender Bars and the Lavender Shortbread, food is also definitely more fun with friends and a glass of chardonnay.
FRENCH LAVENDER POUND CAKE
1/2 cup lavender sugar
1 teaspoon lavender buds
4 eggs
1 cup unsalted butter
3/4 cup sour cream
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar
1 tablespoon vanilla
1 teaspoon grated lemon peel
1 cup powdered sugar
1 tablespoon butter, melted
3 to 4 teaspoons of lemon juice
Heat oven to 325F.
Process the lavender sugar and lavender buds in a food processor (it will be like powdered sugar). Let the eggs, 1 cup of butter and sour cream stand at room temperature for 30 minutes. Grease and flour 2 loaf tins, set aside.
In a medium bowl, stir flour, baking powder, baking soda and salt. Set aside. In a large bowl, beat the lavender sugar mixture, sugar, 1 cup of butter and vanilla with mixer on high speed until light and fluffy, about 4 minutes, scraping sides frequently.
Add eggs, one at a time, beating on medium speed 20 to 30 seconds after each addition. Alternately add flour mixture and sour cream to butter mixture, beating on low speed after each addition until just combined. Stir in lemon peel. Spread in pans. Bake 45 minutes.
Cool completely.
Mix powdered sugar, 1 tablespoon butter and lemon juice.
Spoon over cake.

2 tablespoons of olive oil
2 tablespoons of butter
2 leeks, chopped
1 onion, chopped
pinch of sugar
1/2 cup mayonnaise
1/2 cup sour cream
3/4 cup crumbled blue cheese
black pepper
1 tablespoon lavender, chopped fine
Heat the olive oil and butter in a skillet, cook the leeks and onion for about 10 minutes, over medium-low heat. Add the sugar and continue to cook, stirring occasionally until browned, about 15 more minutes. Remove from the heat and cool.
In a bowl, blend together the mayonnaise and sour cream. Add blue cheese, lots of black pepper and lavender. Gently combine then stir in the onion mixture.

1 cup flour
1/3 cup confectioners' sugar, plus more for dusting
1/4 cup cornstarch
3/4 teaspoon salt
1 stick butter, cold and cut into small pieces
1 teaspoon dried lavender
1 cup sugar
3 eggs, plus one egg yolk
1/2 cup fresh lemon juice
zest of 1 lemon
Heat oven to 350F.
Line an 8 inch square baking pan with parchment, leaving a 2 inch overhang.
In a food processor, pulse 3/4 cup flour, confectioners' sugar, cornstarch and 1/2 teaspoon salt to combine. Add butter and lavender, and pulse until the mixture resembles coarse crumbs.
Transfer the dough mixture to the prepared pan, press down to form the crust.
Bake dough until set and golden brown, 20 to 25 minutes. Remove from the oven and set aside.
Reduce the oven temperature to 325F.
In a bowl, using an electric mixer on medium speed, beat sugar, eggs, and yolk until pale yellow. Beat in lemon juice and zest, and remaining flour and salt, until well combined. Pour filling over the still warm crust and bake until filling is set, about 20 minutes. Remove pan from oven and let cool to room temperature, then refrigerate for at least an hour. (I seem to remember the lemon bars were still a bit gooey after cooking, so they may benefit from a longer oven time).
To serve, use the parchment overhang to lift the dessert from the pan. Dust the top with confectioners' sugar and cut into squares.

1 1/2 teaspoons vanilla extract, divided

Mix flour, 1/3 cup of the confectioner's sugar and cornstarch in food processor. Add butter and pulse until coarse crumbs form. Add honey, lavender and 1 teaspoon of the vanilla. Cover and pulse until the dough pulls away from the bowl.
Place dough in a greased tart pan (I made half of the recipe and used two 4 1/2 inch tart pans). Press the top to form a smooth, even layer. Pierce the dough with a fork (I forgot to do this).
Bake for 25 to 30 minutes (I baked my smaller ones for 20 minutes). Place the pan on a wire rack to cool.
Mix the remaining confectioner's sugar, vanilla and cream in a small bowl, until well blended and smooth. Drizzle over the cooled shortbread.

SOUR CHOCOLATE CAKE
It all started when I took my boys out for dinner.
The couple behind us ordered chocolate cake for dessert, but when we had finished our main course, it was time to go home, so there was no satisfying our sweet tooth at the restaurant. After my husband and I had been out for dinner, we came home to find our babysitter had made a special trip to the store to pick up a chocolate cake for the kids - apparently they had been asking, pleading and begging for chocolate cake!
I decided by that point, I wanted chocolate cake too - and this recipe sounded too good to pass up
SOUR CHOCOLATE CAKE
FOR THE CAKE
1/2 cup milk
1 1/2 teaspoon white vinegar
3/4 cup shortening
2 cups flour
2 cups sugar
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 cup cocoa powder
8 tablespoons butter
3 eggs, lightly beaten
FOR THE ICING
2 cups confectioners' sugar
3 tablespoons cocoa powder
1/4 cup milk
5 tablespoons butter
MAKE THE CAKE
Mix milk and vinegar in a bowl, let sit until slightly curdled, about 10 minutes.
Heat oven to 350F. Grease a 9 by 11 baking dish. Whisk flour, sugar, cinnamon, and baking soda in a bowl, make a well in the center. Bring shortening, cocoa powder, butter and 1/2 cup water to a boil in a saucepan. Cook, whisking constantly, until smooth, 5 to 7 minutes, let cool slightly. Whisk in milk mixture and eggs. Stir wet ingredients into dry ingredients until a smooth batter forms. Pour batter into greased pan and smooth top. Bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes, let cool.
MAKE THE ICING
Whisk confectioners' sugar and cocoa powder in a bowl. Simmer milk and butter in a saucepan over medium heat utnil butter is melted, 3 to 4 minutes. Whisk in sugar mixture until smooth. Pour icing over cake, let set completely, about 30 minutes.

FRUITCAKE
Although I realize Fruitcake is maligned the world over, it remains one of my favorite Christmas traditions, although not one recognized every year, nor celebrated by the rest of my family. I aspire to bake a moist, dense delicious cake, reminiscent of my Childhood treats - although to be honest, I was in College before I could fully appreciate the beauty of fruit in a cake.
FRUITCAKE
2 cups brown sugar

1 1/2 cups butter, melted
1 3/4 cups brandy
Heat oven to 225F.
Grease and flour a tube pan.
In a large bowl, combine sugar, flour, soda, spices, eggs, lemon rind, vanilla, 1/2 cup brandy, fruit, nuts and melted butter. Mix thoroughly, and pour into prepared pan.
Bake for 1 hour, or until a tester inserted in the center comes out clean.
Cool on a wire rack.
Wrap cooled cake in foil. Sprinkle 2 tablespoons of brandy over the cake every day for 2 weeks.

FUNNY CAKE and VANILLA CREAM CHEESE FROSTING
I was rushing to meet friends for lunch, a lovely birthday celebration for lovely ladies. I stopped by a local bakery to pick up petit fours for them, and because I wasn't sure I would have time to bake or make a snack for my kids and their friends after school, I also purchased cake pops and adorable football themed cookies.
As it happened, there was plenty of time to mix up this Funny Cake and settle it into the oven to cook, while the kids were happily playing and entertaining each other.
FUNNY CAKE
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1/3 cup vegetable oil
1 teaspoon vinegar
1 cup cold water
Frosting - recipe to follow
Heat oven to 350F.
Place a sifter in an 8-inch square baking pan. Add flour, sugar, cocoa powder, baking soda and salt to sifter and sift into pan.
Using a mixing spoon, make three wells in the dry flour mixture. Add vanilla to one well, add the vegetable oil to another well, and add the vinegar to the third well. Pour the cold water over the mixture, distributing it evenly. Stir gently until no lumps remain. Bake cake for 35 minutes or until edges begin to pull away from the pan.
Cool in pan on a wire rack. Once cool, spread the frosting on the cake and decorate with sprinkles if desired.

COUNTRY CAKE
I made this on an extremely busy day - one of those crazy, even busier days than usual - when I knew household chores and errands wouldn't leave me any time for any kind of elaborate recipe - when I was rushing from one activity to another and I barely found the time to pop a cake in the oven - when even the lady giving me my pedicure (because I just HAD to squeeze it in) scolded me and told me I needed to relax!
COUNTRY CAKE
2 cups self-rising flour
2 cups sugar
1 cup vegetable oil
1 cup milk
3 eggs
1 1/2 teaspoons vanilla extract
Heat oven to 350F.
Grease a 9 by 13 inch glass baking dish.
Place all ingredients into a large mixing bowl and mix well by hand. Pour into prepared baking dish. Bake 35 to 45 minutes, until cake top is lightly browned. Remove from oven and immediately prepare the icing.

1 (5 ounce) can of evaporated milk
1/2 cup butter
1 teaspoon vanilla extract
Stir sugar, flour and milk together in a saucepan, add butter and bring mixture to a rolling boil over medium heat, stirring to avoid sticking. Remove from heat and stir in vanilla.
Poke holes all over the top of the cake with a fork and pour warm icing over the surface of the cake.

CARAMEL APPLE CRISP and GOOEY APPLE CAKE and APPLE PEAR PIE
The First Day of Fall was yesterday, with the season officially changing from Summer at 4:44pm.
With the slight drop in temperature, different produce available at the markets and clear, bright blue skies, this time of year is inspiring and exciting.
I commence drawing my curtains early against the night, as opposed to leaving them open as I do in the summer months, enclosing my family in a safe, cozy space. I change the covers on our bed, and cook heartier, warmer, richer foods.
CARAMEL APPLE CRISP
1/2 cup caramel topping
1/2 teaspoon ground cinnamon
4 to 6 baking apples, peeled, cored and diced
2/3 cup flour
1/2 cup brown sugar
1/2 cup cold butter, cut into small pieces
2/3 cup quick cooking oats
Heat oven to 375F.
In a large bowl, stir together caramel topping and the cinnamon until blended. Add apples, toss until evenly coated. Spread in 8-inch baking dish.
Bake 45 to 50 minutes, or until apples are tender and topping is golden brown. If desired serve with whipped cream and extra caramel topping.

GOOEY APPLE CAKE
8 tablespoons butter, divided
1 1/2 cups sugar, divided
1 egg
1 cup flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 large apples, cored and chopped
1 cup coarsely chopped walnuts
2 teaspoons cornstarch
1/4 cup evaporated milk
1 teaspoon lemon juice
1 teaspoon vanilla extract
Heat oven to 350F.
Grease a 9 inch pan.
Cream butter and one cup of sugar. Add egg and beat well. Stir in flour, baking soda, cinnamon, salt, apples and walnuts. Batter will be stiff. Spoon into pan, bake for 35 minutes.
Combine 3 tablespoons of butter, 1/2 cup sugar, cornstarch and milk in a saucepan. Bring to a boil and cook for 2 minutes, stirring constantly.
Remove from heat, stir in lemon juice and vanilla.
Pour over hot cake. Serve warm.

1 1/2 pounds of apples, peeled, cored and sliced
3/4 pound pears, peeled, cored and sliced
1 lemon, zested, then juiced
1/4 cup rum
2 tablespoons finely chopped crystallized ginger
2 teaspoons vanilla extract
2 tablespoons sugar
1 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon flour
2 frozen pie crusts, thawed slightly
Heat oven to 350F.
Toss apples, pears, zest, juice, rum, ginger, vanilla, sugar, cinnamon and salt in a bowl. Sprinkle with flour and toss again. Scoop fruit mixture into one crust, top with the other crust.
Cut slits and crimp edges together. Bake until golden, 45 to 50 minutes.

BIG AND BUTTERY CHOCOLATE CHIP COOKIES and BLUEBERRY DROP BISCUIT COBBLER and BANANA SPLIT CAKE
Cookies, Cake and Cobbler - three sweet ways to celebrate an end of summer sleep over.
I baked up a storm amidst the storm of my kids and a bunch of their friends.
BIG AND BUTTERY CHOCOLATE CHIP COOKIES
1 cup butter, softened
1 cup brown sugar
3/4 cup sugar
2 eggs
1 1/2 teaspoon of vanilla extract
2 2/3 cups flour
1 1/4 teaspoons baking soda
1 teaspoon salt
1 package of semisweet chocolate chips
2 cups coarsely chopped walnuts, toasted
In a large bowl, cream the butter, brown sugar, and sugar until light and fluffy. Beat in the eggs and vanilla. Combine the flour, baking soda and salt, gradually add to creamed mixture and mix well. Stir in chocolate chips and walnuts.
Shape quarter cupfuls of dough into balls. Place in an airtight container, separating layers with waxed or parchment paper, cover and refrigerate 12 hours or overnight.
To bake, place dough balls 3 inches apart on parchment paper lined baking sheets.
Press a shallow indentation in the center of each with your thumb, reshaping sides to smooth any cracks. Let stand at room temperature for 30 minutes.
Bake at 400F for 10 to 12 minutes or until edges are golden brown. Cool for 2 minutes before removing from pans to wire racks, cool.

1 1/2 cups plus 3 tablespoons flour
3 tablespoons plus 1 cup of sugar
1 1/2 teaspoons of baking powder
1/2 teaspoon of salt
6 tablespoons of chilled, unsalted butter, cut into 1/2 inch pieces
1/2 cup plus 1 tablespoon of creme fraiche
6 cups of fresh blueberries
2 tablespoons of fresh lemon juice
1 tablespoon of finely grated lemon zest
Heat the oven to 375F.
Whisk 1 1/2 cups flour, 3 tablespoons of sugar, baking powder, and salt in a large bowl. Add butter, using your fingertips, incorporate until only pea sized lumps remain. Gently mix in creme fraiche. Knead in bowl until a biscuit like dough forms, 5 to 7 turns.
Combine remaining 1 cup sugar, remaining 3 tablespoons flour, berries, juice, and zest in a large bowl. Toss to coat. Pour into an 8 by 8 glass baking dish or divide among six 6-ounce ramekins.
Scatter biscuit topping over berries.
Bake cobbler until juices are thick and bubbling and topping is cooked through and a deep golden brown, 20 to 25 minutes for ramekins, 45 to 50 minutes for baking dish.
Let cool for at least one hour.

Beat pudding mixes and milk with a whisk for 2 minutes. Stir in 1 cup of whipped topping. Spread over banana layer in pan. Top with remaining whipped topping. Refrigerate 5 hours. Just before serving top with nuts.

BANANA CAKE WITH LEMON BUTTER FROSTING
I was walking on the treadmill, enjoying a good book and a peaceful moment when I abruptly came to a standstill - the power had gone out. Thankfully the banana cake had just come out of the oven and the coffee
had already been brewed, and it was no hardship to enjoy the cake plain until the power was
back on.
However, it was very peculiar to be home, but not be able to continue exercising, put on a load of laundry, raise the garage door, turn on a light, or use the computer. So I sat outside in the cool morning and read the newspaper. Then I thought I would attempt my Saturday morning Hot Yoga class, which was its usual sizzling self, because by the time I walked down town to the studio, the power had come back on.
Once I was home I was able to mix up the luscious Lemon Butter Frosting, and it was definitely worth waiting for.
BANANA CAKE WITH LEMON BUTTER FROSTING
1/2 cup butter
1 1/4 cups sugar
2 eggs
1 teaspoon baking soda
4 tablespoons sour cream
1 to 1 1/2 cups banana pulp, mashed
1 1/2 cups of cake flour
1/4 teaspoon salt
1 teaspoon vanilla
Heat oven to 350F.
Cream butter and sugar. Add eggs, beaten lightly, and the baking soda, dissolved in the sour cream. Beat well, then add the bananas, cake flour, salt and vanilla. Mix well.
Bake in a well buttered loaf pan, for 50 to 55 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
Top with Lemon Butter Frosting.
LEMON BUTTER FROSTING
2 tablespoons butter
1 cup powdered sugar
add grated rind from one lemon
1 tablespoon milk
1 tablespoon lemon juice
Cream butter and sugar well. Add grated lemon rind, mix well. Add milk and lemon juice until thin enough to spread.

WINE CAKE and VODKA CAKE
I revel in travel and one of the things I always look forward to on a long journey is having the time to read a great book. I lugged three with me on a recent trip, sadly, none of which were very captivating.
However, I did appreciate "One Good Deed", by Erin McHugh. It was a book that provided much material for contemplation, and I concluded, if we were all a little more conscious of what was going on in the moment, immediately around us, we can make a big difference with small gestures. Even my 8 year old daughter and 65 year old mother enjoyed reading it whenever I put it down.
When there is a recipe featured in a book, I am always intrigued and usually want to try it, I love the stories surrounding food. This Wine cake was baked every year for the authors birthday, originally by her mother, and now by her cousin. I could not wait to try something that celebrated, and it was truly wonderful, and worthy of the tradition.

WINE CAKE
1 package yellow cake mix
1 small package vanilla instant pudding
4 eggs
3 tablespoons butter
1/2 cup vegetable oil
1 cup wine
1/4 cup hot water
1 teaspoon nutmeg
Heat oven to 350F. Combine all ingredients in a bowl and mix with electric mixer on medium for about two minutes. Pour into bundt pan and bake for 40 to 45 minutes.

However, I did appreciate "One Good Deed", by Erin McHugh. It was a book that provided much material for contemplation, and I concluded, if we were all a little more conscious of what was going on in the moment, immediately around us, we can make a big difference with small gestures. Even my 8 year old daughter and 65 year old mother enjoyed reading it whenever I put it down.
When there is a recipe featured in a book, I am always intrigued and usually want to try it, I love the stories surrounding food. This Wine cake was baked every year for the authors birthday, originally by her mother, and now by her cousin. I could not wait to try something that celebrated, and it was truly wonderful, and worthy of the tradition.

COCONUT LEMON SOUR and TUNA AND CAPER DIP and COCONUT LIME CHICKEN TACOS and BANANA SOUR CREAM MASCARPONE CAKE
I invited friends over for cocktails by the pool - but we moved up to the back deck once the kids, chilly and exhausted from swimming, decided they would rather play indoors.
We Mums could faintly hear the music from the Ice Cream truck at the park, and in an attempt to entice the kids outside once more, I called one of the drivers I know - a better connection than Santa Claus this balmy time of year - and not 6 minutes later, he was in our driveway dispensing his frozen treats, and merry music - the kids were ecstatic!
I developed my menu for the adults, around the Coconut Lemon Sour cocktail - which I had first tried at a friends informal gathering, and was excited to replicate and share.
COCONUT LEMON SOUR
2.5 ounces of coconut water
1.5 ounces of coconut vodka
.75 ounces of lemon juice
.75 ounces of simple syrup or agave nectar
Mix all ingredients together and pour over ice.
Enjoy!

Season with salt and freshly ground black pepper.

2 to 3 chicken breasts

1 teaspoon ground cumin
zest and juice of 1 lime
splash of hot sauce
salt and freshly ground black pepper
1/4 cup fresh cilantro, chopped

1 avocado, peeled, pitted and chopped
Combine the chicken breasts, coconut milk, cumin, lime zest and juice, and hot sauce. Simmer until chicken is cooked through. Coarsely chop chicken and return to the pot, continue cooking until liquid has mostly boiled away. Season with salt and pepper, remove from the heat and stir in the cilantro. Divide among the warmed flour tortillas, or tortilla cases (I cut rounds from the tortillas, put them into mini muffin pans, and baked them for 7 to 10 minutes at 375F until they were lightly browned and crisp).
To serve, top each tortilla with avocado.

BANANA SOUR CREAM MASCARPONE CAKE
1 package yellow cake mix
3 eggs
1 cup mashed bananas
1/2 cup sour cream
1/2 cup mascarpone
1/4 cup oil
8 ounces cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla essence
4 cups powdered sugar
Heat oven to 350F.
Beat cake mix, eggs, bananas, sour cream, mascarpone and oil with mixer on low until moistened, scraping bottom of bowl as needed. Beat on medium speed for 5 minutes.
Pour into greased 13 by 9 inch pan. Bake for 35 minutes or until toothpick inserted in center comes out clean. Cool cake completely in pan on wire rack.
Beat cream cheese and butter with mixer on medium until blended, add vanilla essence. Gradually add sugar, beating well after each addition.
Remove cake from pan, carefully cut cake crosswise in half.
Place 1 cake half, top side down, on a plate, spread the top with frosting. Top with the remaining cake half, frost the top and sides.

ZUCCHINI CORN BREAD WITH SPICED NUTS and GOLDEN ZUCCHINI CAKE WITH APRICOTS AND RAISINS and ZUCCHINI OLIVE OIL AND PISTACHIO MADELEINES
This was some of the most delicious, moist corn bread I have ever had.
ZUCCHINI CORN BREAD WITH SPICED NUTS
1 cup flour
1 cup yellow cornmeal
1/2 cup spiced mixed nuts, finely chopped
1/3 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
4 eggs
1/2 cup butter, melted
1/2 cup unsweetened apple sauce
1 (14.75 ounce) can of cream style corn
1 cup shredded zucchini
1 cup shredded cheddar cheese
1/2 cup finely chopped onion
Heat oven to 300F.
Grease a 13 by 9 inch baking pan, set aside.
In a large bowl, stir together flour, cornmeal, nuts, sugar, baking powder and salt, set aside.
In a bowl, whisk together the eggs, butter, and applesauce. Stir in the corn, zucchini, cheese and onion. Add butter mixture all at once to cornmeal mixture. Stir just until moistened. Pour batter into prepared pan.
Bake for 50 to 60 minutes or until edges are golden brown.
Serve warm.

This cake was delicious - rich and moist - and filled with fruit and spice. The cream cheese frosting wasn't too sweet and complimented the cake perfectly.
I stored the cake in the refrigerator, and it was even better the following day and even the one after that.

1/4 cup creme fraiche
grated zest of 1 lemon
1/3 cup olive oil
1 egg
1 cup flour
2 teaspoons baking powder
1/4 teaspoon ground white pepper
1/2 teaspoon salt
1/3 cup parmesan, grated
1/4 cup pistachios, chopped
Wrap grated zucchini in paper towels.
Heat oven to 375F.
In an electric mixer, beat creme fraiche, lemon zest, oil and egg on medium speed until uniform consistency is reached.
Sift flour, baking powder, pepper and salt together. Shift mixer to low speed and add dry ingredients to egg mixture, a third at a time, scraping bottom of the mixing bowl between each addition.
With mixer still on low speed, add parmesan and drained zucchini and mix until well incorporated.
Pipe batter into a madeleine mold and garnish with chopped pistachios. Bake until tops are golden brown, 8 to 12 minutes.

LAMB MINT AND FETA MEATBALLS and CORNMEAL ROSEMARY CAKE WITH PINE NUTS AND ORANGE GLAZE
One of my very favorite events during Teacher Appreciation week, is the luncheon. I absolutely love to organize it, and the parents at the school really make an incredible effort - we want to make our teachers feel special and appreciated by providing a spectacular spread that can be leisurely (that's the idea anyway) enjoyed! This year it was held at a beautiful historic home, nestled among peaceful, seemingly endless gardens - it was a beautiful, warm day, and the tables were set up out on the gorgeous porch. We settled upon a Mediterranean theme, and, as always, the parents were excited and able to provide many fabulous dishes.
LAMB MINT AND FETA MEATBALLS
1 slice of white bread
1/2 pound of ground lamb
1/4 cup finely chopped onion
1 large egg, lightly beaten
1 1/2 tablespoons of finely chopped fresh mint, plus extra for serving
1 tablespoon grated feta cheese
2 cloves of garlic, minced
1 teaspoon finely chopped fresh oregano
1/2 teaspoon ground cinnamon
salt and freshly ground black pepper
1/2 cup flour
Remove the bread crusts. Put the bread slices in a small bowl and add enough water to soak the bread through (about 1/4 cup). With your hands, squeeze the water out of the bread and tear it into small pieces into a medium bowl. Add the lamb, onion, egg, mint, cheese, garlic, oregano, cinnamon, 1 teaspoon of salt and 1/4 teaspoon of pepper to the bread and mix thoroughly. Cover and refrigerate for at least 2 hours or overnight (I was running behind, so mine were in the refrigerator for about an hour).
With the palms of your hands, roll the meat mixture into 1-inch balls. Put the flour into a bowl, and dredge the meatballs through the flour, until well covered. Transfer to a baking sheet, shaking off excess flour.
Heat the oven to 400F.
Bake the meatballs for 20 minutes, or until cooked all the way through (the recipe called for frying them - which I know would have been delicious - I was trying to be a little healthier).
Arrange the meatballs on a platter, sprinkle with mint and serve warm.

FOR THE CAKE
1 1/2 cups flour
3/4 cup yellow cornmeal
1/3 cup coarsely chopped toasted pine nuts
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely grated orange zest
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup mascarpone, at room temperature
4 eggs
1 1/3 cups sugar
1/2 cup unsalted butter, melted
FOR THE ORANGE SYRUP
1/2 cup fresh orange juice
3 tablespoons sugar
FOR THE ORANGE GLAZE
1 tablespoon whole fresh rosemary leaves (stripped from the stem but not chopped)
1 1/2 cups confectioners sugar
5 tablespoons cream
2 tablespoons fresh orange juice
1 teaspoon grated orange zest
MAKE THE CAKE
Heat oven to 350F. Butter a 9X2 inch round cake pan, line the bottom with a round of parchment, and butter the parchment.
In a medium bowl, whisk together the flour, cornmeal, pine nuts, rosemary, orange zest, baking powder, and salt.
In a large bowl, briefly whisk the mascarpone to loosen it. Add the eggs one at a time, whisking to combine. Add the sugar and whisk until smooth. Using a rubber spatula, fold the dry ingredients, in two batches, into the wet ingredients, mixing until smooth. Stir in the melted butter with the rubber spatula until blended.
Scrape the batter into the prepared pan, spread evenly, and bake until the entire top of the cake is a rich golden brown and springs back when pressed gently in the center, 40 to 45 minutes. A skewer inserted into the middle of the cake should come out looking a bit moist, and the sides of the cake may have begun to pull away from the pan.
MAKE THE ORANGE SYRUP
While cake is baking, combine the orange juice and sugar in a small saucepan over medium heat and cook for a few minutes, stirring occasionally, until the sugar dissolves. Remove from the heat.
Let the cake cool in its pan on a rack for 5 minutes. Run a small knife around the cake. Set an inverted plate over the cake pan and tip upside down. The cake should slide right out onto the plate.
Peel off the parchment, and place the cake right side up on serving plate.
With a wooden skewer, poke a few dozen holes all over the top of the cake. While the cake is still warm, brush the cake with the warm orange syrup. Continue brushing for several minutes, giving the syrup time to sink into the cake, until you've used all the syrup. Let the cake cool completely.
MAKE THE ORANGE GLAZE
Bring a small saucepan of water to a boil. Have ready a small bowl of ice water. Put the rosemary leaves in a small sieve and dip into the boiling water to blanch them for 1 minute. Drain the rosemary leaves and immediately set them (still in the sieve) into the ice water. Drain and spread the rosemary leaves on a paper towel to dry (personally I think you can skip this step - I don't think the rosemary leaves added anything to the cake). In a bowl, whisk the confectioners sugar, cream, and orange juice until smooth and then whisk in the blanched rosemary (if using) and the zest.
When the cake is cool, pour the glaze over the top of the cake. Let sit for an hour before cutting the cake, the glaze may or may not become firm, depending on the weather.

2/3 cup mascarpone, at room temperature
4 eggs
1 1/3 cups sugar
1/2 cup unsalted butter, melted
FOR THE ORANGE SYRUP
1/2 cup fresh orange juice
3 tablespoons sugar
FOR THE ORANGE GLAZE
1 tablespoon whole fresh rosemary leaves (stripped from the stem but not chopped)
1 1/2 cups confectioners sugar
5 tablespoons cream
2 tablespoons fresh orange juice
1 teaspoon grated orange zest
MAKE THE CAKE
Heat oven to 350F. Butter a 9X2 inch round cake pan, line the bottom with a round of parchment, and butter the parchment.
In a medium bowl, whisk together the flour, cornmeal, pine nuts, rosemary, orange zest, baking powder, and salt.
In a large bowl, briefly whisk the mascarpone to loosen it. Add the eggs one at a time, whisking to combine. Add the sugar and whisk until smooth. Using a rubber spatula, fold the dry ingredients, in two batches, into the wet ingredients, mixing until smooth. Stir in the melted butter with the rubber spatula until blended.
Scrape the batter into the prepared pan, spread evenly, and bake until the entire top of the cake is a rich golden brown and springs back when pressed gently in the center, 40 to 45 minutes. A skewer inserted into the middle of the cake should come out looking a bit moist, and the sides of the cake may have begun to pull away from the pan.
MAKE THE ORANGE SYRUP
While cake is baking, combine the orange juice and sugar in a small saucepan over medium heat and cook for a few minutes, stirring occasionally, until the sugar dissolves. Remove from the heat.
Let the cake cool in its pan on a rack for 5 minutes. Run a small knife around the cake. Set an inverted plate over the cake pan and tip upside down. The cake should slide right out onto the plate.
Peel off the parchment, and place the cake right side up on serving plate.
With a wooden skewer, poke a few dozen holes all over the top of the cake. While the cake is still warm, brush the cake with the warm orange syrup. Continue brushing for several minutes, giving the syrup time to sink into the cake, until you've used all the syrup. Let the cake cool completely.
MAKE THE ORANGE GLAZE
Bring a small saucepan of water to a boil. Have ready a small bowl of ice water. Put the rosemary leaves in a small sieve and dip into the boiling water to blanch them for 1 minute. Drain the rosemary leaves and immediately set them (still in the sieve) into the ice water. Drain and spread the rosemary leaves on a paper towel to dry (personally I think you can skip this step - I don't think the rosemary leaves added anything to the cake). In a bowl, whisk the confectioners sugar, cream, and orange juice until smooth and then whisk in the blanched rosemary (if using) and the zest.
When the cake is cool, pour the glaze over the top of the cake. Let sit for an hour before cutting the cake, the glaze may or may not become firm, depending on the weather.

GARLIC CHEESE GRITS and EASTER VIGIL COFFEE CAKE
I find it very difficult to resist a new recipe and when the call went out in church for cooks to contribute to the Easter Vigil breakfast - with recipe and pan provided - I knew that was a volunteer opportunity for me.
Even though these were both delicious for the holiday, the grits and coffee cake would be perfect for any celebration - from Saturday morning spent at home with family (which feels like something to celebrate and be thankful for in this busy life) to a festival with friends.
GARLIC CHEESE GRITS
8 cups water
2 teaspoons salt
2 cups uncooked quick grits (not instant)
2 (12 ounce) blocks of Mexican Velveeta cheese, cubed
1/2 cup butter, cubed
1/4 teaspoon red pepper
4 cloves garlic, minced
Bring water and salt to boil in a large saucepan.
Gradually stir in the grits and bring to a second boil, reduce heat and cook over medium heat for 4 to 5 minutes, stirring often.
Add the cubed Velveeta, butter, red pepper, and minced garlic to grits, stirring until melted and blended.
Pour grits into a 9 by 13 pan and bake for 30 minutes at 350F or until set and brown at the edges.
Enjoy!
EASTER VIGIL COFFEE CAKE
1 package yellow cake mix
2 (3 ounce) boxes of instant vanilla pudding
3/4 cup corn oil
3/4 cup water
4 eggs
1/2 teaspoon butter flavoring
1 teaspoon vanilla
1 cup toasted chopped pecans
2 teaspoons cinnamon
1/2 cup granulated sugar
TOPPING
1 cup powdered sugar, sifted
1/2 teaspoon vanilla
milk, as needed
Heat oven to 350F.
In a large bowl, combine cake mix, pudding, oil, water, eggs and flavorings. Beat with an electric mixer for about 8 minutes.
Combine cinnamon and sugar in a small bowl, set aside.
In a buttered 9 by 13 baking pan, spread chopped pecans over bottom. Pour half the batter over the pecans and sprinkle with cinnamon/sugar mixture.
Pour remaining batter and spread evenly.
Bake for 35 minutes, or until done.
Combine powdered sugar, vanilla and enough milk to make a runny mixture. Drizzle topping over coffee cake.
Enjoy!

MASHED POTATO CHOCOLATE CAKE
While looking into the history of April Fools Day, I learned that pranks should not be pulled after 12 noon on the 1st, or it will bring bad luck to the perpetrator. I had never heard that before, nor that the day supposedly began in the 1500's when the Gregorian calendar came into use. Previously New Years was celebrated on April 1st, and people who ventured to celebrate on the wrong date were teased as "April Fools" (snopes.com http://www.snopes.com/holidays/aprilfools/origins.asp).
Thankfully I pulled my prank early in the day, with this chocolate cake that includes mashed potatoes. I didn't tell the kids what was in their treat until afterwards, for fear they wouldn't try it. There weren't any complaints though, and they all cleaned their plates, so the cake must have tasted like dessert and not dinner.
MASHED POTATO CHOCOLATE CAKE

1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
2 cups sugar
4 eggs
2 ounces chocolate, melted
1 teaspoon vanilla extract
1 cup prepared instant mashed potatoes
3/4 cup buttermilk
confectioners' sugar, for dusting
Heat oven to 375F.
Grease and flour a 9 by 13 baking dish, set aside.
Sift together flour, cocoa powder, baking soda and salt, set aside.
In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in melted chocolate, vanilla and mashed potato. Beat in flour mixture alternately with buttermilk, mixing just until incorporated.
Pour batter into prepared pan and bake 45 minutes or until a toothpick inserted in the center comes out clean. Cool completely. Dust with confectioners' sugar before serving.
