ROASTED RED PEPPER HUMMUS

My husband was out of town overnight, for the Arkansas Hospitality Association meeting, while
I enjoyed and appreciated the change in our weeknight routine, and took the opportunity to cook as little as possible, and to use up what was in the refrigerator.
I made this yummy Roasted Red Pepper Hummus, slathered it on a sandwich with goat cheese, then piled on chicken, avocado, pan fried Prosciutto and arugula. My daughter took one bite, and suddenly half of my sandwich was gone.

ROASTED RED PEPPER HUMMUS


1 clove garlic, minced
1 cup garbanzo beans, drained
1/4 cup tahini
juice from 1 lemon
3/4 cup roasted red peppers
1/4 teaspoon dried basil
salt and freshly ground black pepper to taste

In a food processor, combine garlic, garbanzo beans, tahini, and lemon juice. Process until the mixture is smooth. Add roasted peppers and basil and pulse until the peppers are finely chopped. Season to taste with salt and pepper. Transfer hummus to a bowl, cover and chill until you are ready to serve.

PARMESAN BLUE CHEESE TOASTS WITH GREEN ONIONS and PIMENTO CHEESE AND BACON CROSTINI and PEPPER GLAZED GOAT CHEESE GRATIN

We have friends who built a pizza oven in their back yard - and host the most fun and fabulous pizza baking evenings.
You can never go wrong with a bread base and toppings, including some kind of cheese. So even though these crust and cheese combinations don't come close to the masterpieces turned out during the parties, they are tasty bites all the same.

PARMESAN BLUE CHEESE TOASTS WITH GREEN ONIONS


1 cup mayonnaise
2 garlic cloves, minced
1/2 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1 1/2 cups freshly grated parmesan cheese
3/4 cup crumbled blue cheese
baguette slices
olive oil
3/4 cup sliced green onions

Combine mayonnaise, garlic, ground pepper and cayenne pepper in a medium bowl and whisk to blend. Mix in cheeses, season with salt.
Heat oven to 400F. Brush bread with olive oil and bake until golden brown on both sides. Spread each toast with cheese mixture. Bake until cheese topping starts to bubble, about 8 minutes.
Transfer toasts to platter, sprinkle with green onions and serve warm.

PIMENTO CHEESE AND BACON CROSTINI


In a mixer fitted with the paddle, combine 2 1/2 cups each of shredded extra-sharp white and monterey jack cheeses. Add two 4-ounce jars of pimentos, drained and finely chopped, along with 3/4 cup mayonnaise, 1/2 teaspoon ground black pepper, and 1/2 teaspoon of garlic powder, blend at low speed.
Season with cayenne. Cover and refrigerate for 2 hours. Spread the pimento cheese on toasts, top with chopped bacon and bake in a 400F oven for 2 minutes.

PEPPER GLAZED GOAT CHEESE GRATIN


1 pound goat cheese, softened
6 tablespoons apricot preserves
4 peppadew peppers, finely chopped
1 pickled jalapeño, seeded and finely chopped
2 tablespoons minced cocktail onions
2 teaspoons Dijon mustard
1 1/2 teaspoons dry sherry
toasted baguette slices for serving

Heat oven to 400F.
Spread the goat cheese in a 5 by 8 inch dish. In a small bowl, whisk the preserves with the peppadews, jalapeño, onions, mustard and sherry. Spread the mixture over the goat cheese and bake on the top rack of the oven for about 5 minutes, until warm. Turn on the broiler and broil for about 2 minutes, until the topping is bubbling and lightly browned at the edges. Serve hot, with toasted baguette slices.

BEET AND GOAT CHEESE FILLED ENDIVE

Following a day of Pilates, meeting friends for coffee and lunch, I hosted happy hour for another group of friends. Lovely ladies that had graciously welcomed me into their homes over the past year, and I was excited to invite them to gather in mine.
Everyone brings a dish, and I knew with my busy day away from home, I needed an appetizer I could make in the 30 minutes between picking my kids up and the arrival of the ladies - these beet and goat cheese endive came together in a matter of minutes, making them the perfect pairing for my happy hour.

BEET AND GOAT CHEESE FILLED ENDIVE


1 beet, cooked, peeled and cubed
1/4 cup sliced almonds
1 to 2 heads of endive
3 ounces of goat cheese, crumbled

Toast almonds on a baking sheet until golden, about 3 minutes. Remove and set aside. Separate heads of endive into leaves, trimming to equal lengths.
Divide beet pieces between the endive spears, top with cheese and almonds.

ROASTED BEETS WITH HAZELNUT VINAIGRETTE AND BURRATA and SPINACH SALAD WITH BEETS, QUINOA AND GOAT CHEESE and ROASTED BEETS AND CELERY ROOT WITH GOAT BUTTER

I LOVE beets! They are one of those ingredients that draws me in, and influences me to try a recipe.
I grew up only knowing pickled beetroot, which we would put on a burger or sandwich, so my discovery of fresh beets during the past few years has been a delicious and beautiful revelation.

ROASTED BEETS WITH HAZELNUT VINAIGRETTE AND BURRATA


VINAIGRETTE
2 tablespoons champagne vinegar
2 tablespoons fresh lemon juice
2 teaspoons minced shallot
2 teaspoons whole grain mustard
6 tablespoons hazelnut oil
salt and freshly ground black pepper
SALAD
2 pounds beets, tops trimmed
2 tablespoons olive oil
salt and freshly ground black pepper to taste
2 8-ounce rounds of burrata, sliced
5 to 6 basil leaves, cut into ribbons
1/4 cup coarsely chopped toasted hazelnuts

VINAIGRETTE
Combine vinegar, lemon juice and shallot in a small bowl. Stir in mustard. Gradually whisk in oil. Season to taste with salt and pepper.
SALAD
Heat oven to 375F.
Toss beets with oil in a large bowl. Season with salt and pepper. Transfer to a baking dish, cover tightly with foil and roast beets until tender, about 40 minutes. Uncover, let stand until cool enough to handle, about 10 minutes. Peel beets, then quarter them.
Toss beets with 1/4 cup vinaigrette in a medium bowl. Arrange burrata on a serving plate. Season with salt and pepper.
Top burrata with beets, drizzle remaining vinaigrette from bowl over the top. Garnish with basil and hazelnuts.

SPINACH SALAD WITH BEETS, QUINOA AND GOAT CHEESE


1 lemon, zested and juiced
1 shallot, finely chopped
3 tablespoons olive oil
5 ounces of spinach
3/4 cup cooked quinoa, cooled
2 cooked beets, peeled and cut into wedges
3 ounces goat cheese
1/2 cup walnuts

In a bowl, whisk the lemon zest and juice, shallot and olive oil, season to taste with salt and pepper. In a large bowl, toss the remaining ingredients with the dressing.

ROASTED BEETS AND CELERY ROOT WITH GOAT BUTTER


1 1/4 pounds golden beets, trimmed
1 tablespoon olive oil
3 tablespoons goat butter
1 pound celery root, peeled and cut into batons
2 thyme sprigs
salt and freshly ground black pepper to taste
1 cup chicken stock

Heat oven to 350F.
In a baking dish, toss the beets with the oil. Cover with foil and roast for about 1 hour, until the beets are tender when pierced. Let cool slightly, then peel the beets and cut them into small wedges.
In a large skillet, heat 2 tablespoons of the goat butter. Add the celery root and thyme sprigs and season lightly with salt and pepper. Cook over moderate heat, stirring occasionally, until lightly browned in spots, about 5 minutes. Add 1/4 cup of the stock and simmer over moderate heat until nearly evaporated, about 2 minutes. Add the remaining stock, 1/4 cup at a time, and cook until the celery root is tender, 8 to 10 minutes total.
Stir in the beets and cook until heated through, about 2 minutes. Discard the thyme sprigs. Swirl in the remaining 1 tablespoon of goat butter and season with salt and pepper.

CRACKER SPOONS WITH CREAMY PIMIENTO CHEESE and LAVENDER GIN GOAT CHEESE COOKIES and CHOCOLATE MACADAMIA NUT BARS

A dear lady and lovely friend hosted a gathering at her home, a farewell party for a colleague of her husbands. I offered to make and deliver some tasty tidbits to help her out a little with the refreshments. 


CRACKER SPOONS WITH CREAMY PIMIENTO CHEESE


1 1/2 package of refrigerated piecrusts
1 egg white, beaten
3/4 teaspoon salt
creamy pimiento cheese (recipe to follow)

Heat oven to 400F.
Unroll pie crusts, brush with egg white and sprinkle with salt.
Cut dough into rounds, or spoon shapes. Place cutouts onto baking sheets.
Bake for 9 to 11 minutes, or until lightly browned and crisp.
Remove from baking sheets to a wire rack, and cool completely (about 20 minutes).
Spoon creamy pimiento cheese into a zip-top plastic freezer bag, snip one corner of the bag to make a small hole. Pipe pimiento cheese onto end of each spoon.

CREAMY PIMIENTO CHEESE
Beat 10 ounces of sharp cheddar cheese, shredded, 1/2 cup mayonnaise, 1 (4 ounce) jar of diced pimiento, drained, 1 teaspoon grated onion, 1 teaspoon Dijon mustard, 1/4 taspoon ground red pepper, and a dash of Worcestershire sauce at medium speed with a heavy duty electric stand mixer 1 minute or until creamy. Season with salt and pepper to taste.

LAVENDER GIN GOAT CHEESE COOKIES


3 sticks of butter, at room temperature
1 cup sugar
1 teaspoon gin
3 1/2 cups flour
3 teaspoons dried lavender
generous pinch of salt
2 to 3 egg yolks, beaten
6 ounces of goat cheese

Mix the butter, sugar and gin together until thoroughly blended. Mix in the flour, lavender and salt until it gets doughy. Roll out the dough on a floured surface to 1/2 inch thick. Freeze for 10 minutes.
Roll the dough into about 24 little balls and dunk them in the beaten egg yolks. Put the balls on a silicone baking mat on a baking sheet and smash them with your thumb to make craters. Put some goat cheese in each crater. Bake until lightly golden on the edges, about 10 minutes.

CHOCOLATE MACADAMIA NUT BARS


CRUST
1 1/2 cups flour
1 cup dark brown sugar
3/4 cup cold butter, cut into pieces
1 cup chopped macadamia nuts, toasted
CARAMEL AND CHOCOLATE
3/4 cup butter
1/2 cup dark brown sugar
1 1/2 cups semisweet chocolate morsels

Heat the oven to 350F.
Grease a 13 by 9 inch baking pan.
To prepare the crust, combine flour and sugar in the bowl of a food processor. Process about 10 seconds to combine thoroughly. Add butter and process until mixture is crumbly, about 30 seconds. Trtansfer mixture to prepared pan and press firmly. Scatter nuts evenly over crust and press them in firmly.
To prepare the caramel layer, melt the butter in a heavy medium sized saucepan over low heat. Add the brown sugar and stir well until thoroughly combined and smooth. Increase heat to medium high and cook, stirring constantly, until entire surface of caramel is bubbly. Immediately pour hot caramel over nuts and spread evenly. Bake 18 to 20 minutes or until caramel is bubbly.
Remove pan from oven. Wait 1 minute, sprinkle chocolate morsels evenly over caramel. Let stand 2 to 3 minutes for chocolate to melt. Spread chocolate evenly. Cool completely, then refrigerate 30 minutes to set. Cut into bars with a sharp knife.

BACON AND TOMATO GUACAMOLE and CHUNKY GUACAMOLE and CHEESE TOPPED GUACAMOLE and ROQUAMOLE and GUILT FREE GUACAMOLE

Happy National Guacamole Day!
I have happily and enthusiastically made a lot of guacamole over the summer - from happy hours with friends to drinks on the deck at the lake house with family. It is a quick, delicious, uncomplicated appetizer, even with anything you might want to add in, such as bacon, blue cheese, goat cheese or asparagus.
It reminds me of certain friends of ours - it is their signature dish, and they make it with such ease and grace - the epitome of relaxed entertainment.
It is a dish best enjoyed freshly made, so I feel like I am watching a live cooking show when our friends invite us over.

BACON AND TOMATO GUACAMOLE


1/2 onion, finely chopped
5 strips bacon
3 avocados
juice of 1 to 2 limes
1 to 2 canned chipotle chiles in adobo, finely chopped
1 tomato, cored and chopped into 1/4 inch pieces
1/4 cup chopped fresh cilantro
salt and freshly ground black pepper to taste

Place onion in a bowl of cold water, set aside.
In a large skillet, cook bacon in a single layer over medium-low heat, turning occasionally until crispy and browned, about 10 minutes. Drain on paper towels, then crumble, set aside.
Cut around each avocado, from stem to blossom end and back again, then twist the two halves apart. Dislodge the pit. Scoop the flesh from the skin into a large bowl. Mash the avocados with the lime juice into a coarse puree.
Drain the onion and shake off the excess water and transfer to the bowl along with the chipotle chiles, tomatoes, cilantro and about 2/3 of the bacon. Gently stir it to combine all of the ingredients. Taste and season with salt and pepper.
Scoop into a serving dish, sprinkle with the remaining bacon and cilantro.

CHUNKY GUACAMOLE


6 avocados, diced
3 to 4 tomatoes, diced
1/2 red onion, finely chopped
1 serrano pepper, finely chopped
1/2 cup chopped fresh cilantro
1/2 cup fresh lemon juice
salt and freshly ground black pepper

Combine all ingredients in a bowl, seasoning to taste with salt and pepper.

CHEESE TOPPED GUACAMOLE


2 avocados, diced
1 tomato, diced
3 tablespoons red onion, finely chopped
1/4 cup finely chopped cilantro
2 tablespoons finely chopped mint
4 slices of pickled jalapeno, finely chopped
juice of 1 lime
salt and freshly ground pepper
queso oaxaca or goat cheese, crumbled
tortilla chips for serving

Mix the avocados, tomato, onion, cilantro, mint, jalapeno and lime juice, season with salt and pepper. Sprinkle with crumbled cheese and serve with tortilla chips.

ROQUAMOLE


3.5 ounces of Roquefort
2 tablespoons sour cream
2 ripe avocados
1 teaspoon sliced pickled jalapeno peppers, finely chopped
1 green onion, finely chopped
juice of 1 lime

Crumble or mash the cheese. Stir in sour cream. Add avocados, mash with a fork.
Stir in jalapenos, green onions and lime juice.

GUILT FREE GUACAMOLE


1/2 pound of asparagus, trimmed
1 avocado
1 tomato, chopped
2 cloves of garlic, minced
1/4 cup diced red onion
1/4 cup minced cilantro
juice of 1 lime
1 serrano pepper, minced

Steam the asparagus, when cool, cut them into 1/2 inch pieces and toss them in a blender with the other ingredients. Pulse until the guacamole is the textue you like. Season with salt and pepper.

HERBED GOAT CHEESE DIP and SWEET PEA CROSTINI and SPRING VEGETABLE AND GOAT CHEESE DIP

There have been several occasions lately that involve visiting friends, bearing an appetizer and a bottle of wine - perhaps something to do with the warmer weather, longer days, and kids being out of school.
The essence of these gatherings is always to relax and have fun and catch up with a gorgeous group of ladies - apparently I have my own theme going that includes toasted baguette and goat cheese.

HERBED GOAT CHEESE DIP


In a medium bowl, beat 2 tablespoons of whipping cream until thickened. Stir in 3.5 ounces of crumbled goat cheese, 1/4 cup of snipped herbs (I used oregano, parsley, dill and tarragon), a finely chopped shallot, finely grated peel from one lemon, and a clove of minced garlic. Stir to combine, season to taste with salt and freshly ground black pepper. Thin with additional cream if desired.
Serve with toasted baguette slices.

SWEET PEA CROSTINI


1 14 ounce package frozen sweet peas, thawed
3 garlic cloves, chopped
3 tablespoons olive oil
2 tablespoons fresh lemon juice
salt and freshly ground pepper to taste
french baguette slices, toasted
1/2 cup crumbled goat cheese

Place peas and garlic in a food processor, add olive oil and lemon juice, season with salt and pepper to taste. Cover and chill 2 hours.
Spoon pea mixture onto toasted baguette slices, sprinkle with goat cheese.

SPRING VEGETABLE AND GOAT CHEESE DIP


1 cup 3/4 inch pieces asparagus
2 tablespoons unsalted butter
1 cup chopped leeks
2 tablespoons flour
1 1/4 cups whole milk
1 cup grated cheddar
salt and freshly ground black pepper
1 (14 ounce) can of chopped artichoke hearts in water, drained
1/2 cup peas
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
1/2 teaspoon finely grated lemon zest
6 ounces crumbled fresh goat cheese, divided

Heat oven to 450F.
Cook asparagus in a large pot of boiling salted water until crisp-tender, about 2 minutes. Drain, let cool.
Melt butter in a medium saucepan over medium heat. Add leeks and cook, stirring often, until soft, about 10 minutes. Whisk in flour, gradually whisk in milk. Bring to a simmer, whisking constantly. Cook, whisking occasionally, until thickened, remove from heat. Add cheddar, whisk until cheese is melted and mixture is smooth. Season to taste with salt and freshly ground black pepper. Fold in asparagus (reserve tips), artichoke hearts, peas, chives, mint, parsley, lemon zest and 4 ounces of crumbled fresh goat cheese.
Transfer mixture to a baking dish, arrange asparagus tips on top and dot with another 2 ounces of goat cheese. Bake until golden brown and bubbling, 15 to 20 minutes. Let rest for 5 minutes before serving.

GARBANZO BEAN AND BACON DIP WITH ROSEMARY PITA CHIPS and GRAPE LEAVES WITH BEEF AND GOAT CHEESE

After our new neighbors moved in, it took us a while to meet the sweet and fabulous family - and we were so glad we did.
Rolf and Jesse became work out partners - heading to the gym most mornings, the talented couple turned a  ramshackle property into an absolutely beautiful home, they gave us wonderful suggestions and advice when we took a recent trip to Asheville, North Carolina, we got to try Wisconsin treats such as cheese curds and Garretts Popcorn and it was always such a pleasure to see them around the neighborhood.
They insisted on hosting their own farewell party when they moved back to Wisconsin, something to do with an immovable vat of beer, but they did welcome appetizers. The Bean and Bacon Dip initially called for white beans, but since I was making Dolmas, I decided to go for more of a Mediterranean theme and substitute garbanzo beans.
Although we miss our friends, I don't miss the moaning and inertia from my husband after he returned from a particularly grueling exercise session.

GARBANZO BEAN AND BACON DIP WITH ROSEMARY PITA CHIPS


CHIPS
1/2 teaspoon dried crushed rosemary
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
3 pita breads, cut into wedges
DIP
4 bacon slices, chopped
4 garlic cloves, minced
1/3 cup chicken broth
1 (15 ounce) can of garbanzo beans, drained
1/4 cup chopped green onions
1 tablespoon fresh lemon juice
1/2 teaspoon hot sauce
1/4 teaspoon salt
1/4 teaspoon paprika

Heat oven to 350F.
To prepare chips, combine dried rosemary, salt, garlic powder and black pepper. Arrange pita wedges in a single layer on a baking sheet. Lightly coated with cooking spray and sprinkle evenly with rosemary mixture. Bake for 15 to 20 minutes, or until golden.
To prepare dip, cook bacon in a small pan over medium heat until crisp. Remove and set aside. Add garlic to the pan, cook 1 minute, stirring frequently. Add broth and beans, bring to a boil. Reduce heat and simmer, uncovered, 10 minutes.
Combine bean mixture, green onions, lemon juice, hot sauce, salt and paprika in a food processor, and process until smooth. Spoon mixture into a bowl, stir in bacon.
Serve with pita chips.

GRAPE LEAVES WITH BEEF AND GOAT CHEESE


1/4 pound lean ground beef
2 tablespoons olive oil
4 ounces goat cheese
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice
grape leaves

Heat a skillet over medium heat. Add beef and cook for 5 to 10 minutes, until no longer pink. Set aside.
Heat grill to high. In a large bowl, combine 2 tablespoons olive oil, beef, goat cheese, thyme, basil, rosemary, parsley, salt, pepper and lemon juice. Taste and adjust seasonings as needed.
Place a grape leaf on a work surface. Scoop a spoonful of goat cheese mixture into the center. Fold the sides over the filling, starting from the end closest to you, gently roll up into a packet. Brush with olive oil and set aside. Continue with remaining leaves and filling.
Place packets seam side down onto the hot grill and cook for 1 minute, turn and cook for another minute, or until cheese is soft.

ROSEMARY RHUBARB DAIQUIRI and SALMON GOAT CHEESE AND LEEK TART and COFFEE CARAMEL CREME BRULEE

This menu was a dinner party disaster y'all!!
Individually, each dish was all right, but when put together they just didn't work. No one was game to try my daiquiri, opting for the more familiar glass of champagne, and the creme brulee ended up with an unappetizing grainy texture. My husband had purchased the main dish that morning from the local farmers market - lamb sausages and broccolini - both of which I love for a casual dinner, but not a dinner party.
Thankfully the outstanding company and conversation more than made up for the food flop - so the evening wasn't a complete catastrophe.

ROSEMARY RHUBARB DAIQUIRI


2 cups water, divided
2 tablespoons plus 1/2 cup sugar
1/2 cup fresh rosemary leaves
3 cups 1/4 inch cubes fresh rhubarb
6 tablespoons fresh lemon juice, divided
1 1/2 cups white rum

Bring 1 cup water and 2 tablespoons sugar to simmer in small saucepan over medium heat, stirring often. Remove from heat, add 1/2 cup rosemary leaves. Let steep 5 minutes, strain.
Let syrup cool 1 hour.
Place rhubarb, 1 tablespoon lemon juice, 1 cup water and 1/2 cup sugar in a blender. Process until coarse puree forms. Strain through a fine mesh sieve into a medium bowl. Discard pulp. Cover and chill rosemary syrup and rhubarb juice separately at least 4 hours and up to 2 days.
Mix rosemary syrup, rhubarb juice, remaining 5 tablespoons lemon juice, and rum in a pitcher. Fill glasses with ice, add daiquiri mixture.

SALMON GOAT CHEESE AND LEEK TART


1 sheet of puff pastry, thawed
1 tablespoon olive oil
2 leeks, halved, thinly sliced crosswise
1 cup cream
1 5.2 ounce package of soft herb cheese (such as Boursin), room temperature
1 3.5 ounce package of goat cheese, room temperature
4 ounces cream cheese, room temperature
1 tablespoon of fresh lemon juice
2 teaspoons of chopped fresh thyme
2 eggs
4 ounces of thinly sliced smoked salmon

Heat oven to 350F.
Roll out puff pastry on a lightly floured surface to a 12 inch square. Line a 9 inch diameter tart pan with a removable bottom with pastry, cutting off excess at edge. Using fork pierce dough all over.
Freeze pastry 5 minutes. Cover pastry with aluminum foil. Fill with pie weights. Bake pastry 15 minutes. Remove weights and foil. Bake crust until golden, about 5 minutes longer. Cool completely on rack.
Heat oven to 425F.
Heat olive oil in heavy large skillet over medium heat. Add sliced leeks and saute until soft, about 5 minutes. Add cream and simmer until leek mixture is reduced to 1 1/4 cups, about 5 minutes, Let cool.
Using wooden spoon, beat herb cheese, goat cheese and cream cheese in a large bowl until well blended. Stir in leek mixture, then lemon juice and thyme. Season mixture to taste with salt and pepper. Stir in eggs 1 at a time, blending well after each addition.
Spread half of filling over bottom of crust. Top with smoked salmon. Top salmon with remaining filling.
Bake tart until filling is set, about 30 minutes. Transfer to platter. Let tart cool to room temperature. Cut into wedges and serve.

COFFEE CARAMEL CREME BRULEE


2 cups cream, divided
1/4 cup dark roast coffee beans, crushed with a mallet in a plastic bag
1 cup sugar, divided
1/2 cup water
2 cups half and half
8 egg yolks
1/4 teaspoon salt
8 tablespoons raw sugar

Bring 1 cup of cream and the coffee beans to simmer in a heavy small saucepan. Remove from heat, cover and let steep at least 20 minutes and up to 1 hour.
Heat oven to 325F.
Stir 2/3 cup sugar and 1/2 cup water in heavy medium saucepan over low heat until sugar dissolves. Increase heat to medium high and bring to boil, brushing down sides of pan with wet pastry brush. Boil without stirring until syrup is deep amber, swirling pan occasionally, about 11 minutes. Remove pan from heat. Add remaining 1 cup cream.
Stir over low heat until caramel is smooth. Stir in half and half. Strain coffee infused cream into caramel cream, discard coffee beans in strainer.
Whisk yolks, salt, and remaining 1/3 cup sugar in a large bowl to blend. Gradually whisk in cream mixture. Strain custard into large measuring cup.
Arrange eight ramekins in a roasting pan. Divide custard among ramekins. Add enough warm water to roasting pan to come halfway up the sides of the ramekins.
Bake until the custards are just set in the center, 65 to 70 minutes. Transfer custards from water bath to the refrigerator. Chill until cold, at least 3 hours and up to 1 day.
Sprinkle top of each custard with 1 teaspoon of raw sugar. Using a kitchen torch, melt sugar on each custard until deep amber. Serve custards cold.

SPICED BLOOD ORANGE SALAD WITH GOAT CHEESE AND GLAZED WALNUTS and TARRAGON CHICKEN and CHOCOLATE POTS DE CREME WITH MAPLE CARAMEL AND SALT

Our babysitter, and friend, and her husband wanted to talk to my husband, a long time entrepreneur about starting their own business.
I invited them for a casual week night dinner, and put the kids to bed so we could sit, have a conversation, trade ideas, and dine in peace.
Their Boot Camp begins this Monday, February the 4th (https://www.facebook.com/fulloutfitness), and I cannot wait to get started!! I have rarely felt a hunger pang since before the holidays, and have been achieving the bare minimum of exercise - I am ready to get back to my healthier lifestyle. 
I had so much fun planning our dinner. I found blood oranges in the store, and I wanted to use them in place of regular oranges because they were a little more special. The Tarragon Chicken was wonderfully tender, and the sauce was absolutely delicious - I was literally spooning it up straight out of the pot (are you starting to see why I might need a little diet and exercise in my life). My Pots de Creme ended up being more like chocolate soup than pudding consistency, but I enjoyed the addition of the maple caramel and salt so much, I hardly noticed.
I am definitely ready to get started full on at Full Out Fitness, and burn off some of my indulgence.

SPICED BLOOD ORANGE SALAD WITH GOAT CHEESE AND GLAZED WALNUTS


6 blood oranges
6 cups greens
1/4 cup olive oil
1/4 cup rice wine vinegar
2 tablespoons chopped fresh chives
1 tablespoon brown sugar
1 tablespoon grated fresh ginger
1/4 teaspoon salt
1/2 cup crumbled goat cheese
1 package roasted and glazed walnut pieces

Peel oranges and cut into sections. Arrange greens on serving plate, top with orange segments.
Whisk together oil, vinegar, chives, brown sugar, ginger and salt, drizzle over salad.
Sprinkle with goat cheese and walnuts.

TARRAGON CHICKEN


1/2 cup plus 2 tablespoons chicken broth
salt and pepper
4 chicken breasts
4 tablespoons Dijon mustard
3 cloves garlic, finely chopped
2 tablespoons dried tarragon, or 3 tablespoons fresh tarragon, chopped, divided use
1/3 cup cream
2 tablespoons cornstarch
1 lemon, zested and juiced
1 tablespoon chopped parsley

Pour the broth into a slow cooker. Season the chicken breasts with salt and pepper, and top with the mustard. Place the chicken in the slow cooker and top with the garlic and 1 tablespoon of dried tarragon. Cover and cook on high heat, until the chicken is tender and a thermometer registers 165F. About 5 hours.
Transfer the chicken to a serving plate and cover to keep warm. Strain the pan juices into a small saucepan and bring to a simmer over high heat. In a small bowl, combine the cream and cornstarch. Whisk the mixture into the saucepan and cook until the sauce is thickened, stir in the lemon juice. Pour the sauce over the chicken.
In a small bowl, combine the lemon zest, parsley and 1 tablespoon of tarragon. Top the chicken with the zest-herb mixture.

CHOCOLATE POTS DE CREME WITH MAPLE CARAMEL AND SALT


2 egg yolks
1/4 cup sugar, divided
1/4 cup cream
5 tablespoons whole milk
2 ounces milk chocolate, chopped
1/2 ounce dark chocolate, chopped
4 teaspoons water
2 tablespoons pure maple syrup
flaky salt, for garnish

Heat oven to 325, set 4 ramekins in a baking dish.
In a bowl, whisk the egg yolks with 2 tablespoons of the sugar until pale. In a small saucepan, bring the cream and milk to a boil. Off the heat, whisk in the chocolates, then the yolk mixture.
Pour the custard into the ramekins. Add enough hot water to the baking dish to reach halfway up the sides of the ramekins. Cover with foil and bake for 22 minutes, until the pots de creme are almost set, but still slightly jiggly in the center. Transfer the ramekins to a rack and let cool to room temperature. Cover and refrigerate for at least 1 hour.
In a small saucepan, cook the remaining 2 tablespoons of sugar and the water over moderate heat until an amber caramel forms, 6 minutes. Stir in the maple syrup.
Pour the warm caramel over the chilled pots de creme. Sprinkle each with a few flakes of salt and serve.

ROASTED PUMPKIN PANZANELLA WITH CHILI CROUTONS and TUSCAN PANZANELLA

I have long been a fan of Panzanella salads - the crusty bread gently softened with olive oil and vinegars, and combined with crispy vegetables - a wonderful combination.
I loved the Tuscan Panzanella the very first time I made it, and I have loved it every time since.
I was so excited when I found this recipe that included pumpkin - the addition of one of my very favorite foods to a favorite salad, was irresistible - and so perfect for this time of year.

ROASTED PUMPKIN PANZANELLA WITH CHILI CROUTONS


1/4 cup butter
3 cups day old bread, cut into 1 inch cubes
1/2 teaspoon red chili powder (I didn't have this on hand, so I used chile powder)
salt
1 small red onion, thinly sliced
1/4 cup sherry vinegar
4 cups of pumpkin of your choice (sugar, crown), peeled, seeded and cut in 1 inch chunks
1/2 cup olive oil, divided use
salad greens
4 plum tomatoes, cored and chopped
1/2 cup crumbled goat cheese
salt and pepper

MAKE CROUTONS
Heat oven to 400F.
In a skillet, melt butter over medium heat and cook until it foams. Immediately add bread and chili powder and toss well to coat. Transfer to baking sheet and sprinkle with salt. Bake croutons until crisp and lightly brown, about 8 to 10 minutes, stirring once. Set aside and cool.
MAKE SALAD
Increase oven to 450F.
Placed sliced onions and vinegar in a bowl, add a pinch of salt and set aside.
In a large roasting pan, toss pumpkin with 1/4 cup olive oil and season with salt and pepper. Spread pumpkin in a single layer and bake until pumpkin is tender, about 25 minutes.
MAKE DRESSING
Whisk 1/4 cup oil into bowl of vinegar and onions. Season to taste with salt and pepper.
ASSEMBLE COMPONENTS
In a large bowl, combine roasted pumpkin, and croutons. Add dressing, salad greens and tomatoes and toss to coat. Season to taste with salt and pepper. Sprinkle the goat cheese on top.

TUSCAN PANZANELLA


4 plum tomatoes
12 yellow cherry tomatoes
2 garlic cloves, sliced into slivers
4 thick slices chewy, day old bread, cut into cubes
1 small cucumber, seeded and diced
1 tablespoon chopped fresh parsley
1/4 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon white balsamic vinegar
handful basil leaves, coarsely chopped
1/4 cup capers, drained
salt and freshly ground black pepper to taste

Heat oven to 350F.
Quarter the plum tomatoes. Make a small cut in the top of the cherry tomatoes and push a sliver of garlic into them, then arrange tomatoes, and bread pieces on a baking sheet. Bake for 20 to 25 minutes.
Put cucumber and  parsley into a salad bowl, add the tomatoes and bread, sprinkle with olive oil and vinegars and season to taste with salt and pepper, toss well. Set aside for 20 minutes to let the flavors develop. Just before serving add basil leaves and capers.
